REAL GERMAN POTATO SALAD - DIRECT FROM MY FRIEND IN FRANKFURT'S
I adopted this recipe from Recipezaar as it didn't have a loving home. I haven't yet been able to make it, but since I am German and generally like a good German potato salad, I thought I would put my name on this great looking recipe! ;) If you make it before I get a chance, please let me know what you think!

Steps:
- In a large skillet, cook onion until tender.
- Stir in flour, blend well.
- Add vinegar and water; cook and stir until bubbly and slightly thick.
- Add sugar and stir until it dissolves.
- Add Mayo or"Miracle Whip".
- Chop pickles; gently stir in pickles and potatoes.
- Serve chilled.
CLASSIC GERMAN POTATO SALAD
Authentic German Potato salad is usually served warm or at room temperature, but however you eat it this salad is absolutely delicious. I must confess that I start eating it as soon as it is mixed, and some say it is even better after it has set for a few hours or the next day.

Steps:
- Boil peeled or skins-on (according to your preference) potatoes in water and bouillon for 15-20 minutes. (This may take longer if you are at high altitude). Don't let them get too soft - a fork should go in but the potatoes should not fall apart.
- Fry bacon and crumble bacon into small pieces.
- Dice the white onion and fry it in the bacon grease.
- Chop the potatoes into cubes.
- Mix the bacon, white onion, oil, mustard, and vinegar together in a bowl that will be large enough to hold your potatoes.
- Chop the green onions.
- Toss the cooled potatoes in your sauce along with the green onions.
- Sprinkle with parsley, salt and pepper to taste.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes; drain.
- Combine chicken broth, vinegar, and oil in a large pot; bring to a boil. Add onion to broth mixture; cook until onion is desired tenderness, 2 to 6 minutes. Remove pot from heat and add potatoes, bacon, and dill; gently stir, adding more chicken broth if needed to moisten salad. Season potato salad with salt and pepper.

This is my mother's recipe. Everyone, German or not, loves it. It is easy to double the recipe as well. I often bring it to potlucks, and we also have it at home on special occasions. There are usually no leftovers, but if there are, they don't last long!

- Place the potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and set aside to cool.
- Place the bacon in a large deep skillet over medium-high heat. Fry until browned and crisp, turning as needed. Remove from the pan and set aside.
- Add onion to the bacon grease, and cook over medium heat until browned. Add the vinegar, water, sugar, salt and pepper to the pan. Bring to a boil, then add the potatoes and parsley. Crumble in half of the bacon. Heat through, then transfer to a serving dish. Crumble the remaining bacon over the top, and serve warm.

MOM'S GERMAN POTATO SALAD
I know there is a debate as to what constitutes "real" German potato salad. All I know is that this is TOO tasty! For those of you who shy away from German Potato salad because it is too vinegary, try this. It has converted MANY people as the balance is darn near perfect. Prep time does not include boiling the potatoes.

Steps:
- Preheat oven to 350 degrees.
- Place potatoes in a casserole dish, season with salt and pepper.
- Cut bacon into smallish pieces.
- Brown in a large skillet.
- Remove bacon with a slotted spoon, and place on top of potatoes.
- DO NOT drain skillet!
- In skillet add the onion, vinegar, water, flour and sugar.
- Mix well, bring to a boil and stir until thickened.
- Place sauce mix over bacon and potatoes.
- Mix well.
- Bake for 30 minutes.
