MAMA'S CHICKPEA IN SOFRITO WITH ARROZ CON GANDULES

My mama's delicious vegetarian Puerto Rican inspired recipe: chickpeas in sofrito served with arroz con gandules (rice with pigeon peas). Delicious and packed with plant-based protein!

For the sofrito (for the chickpeas):
2 teaspoons olive oil
½ cup very finely diced yellow onion
½ cup very finely diced green bell pepper
1/3 cup finely diced cilantro
3 cloves garlic, minced
1 cup tomato sauce (from one 15 oz can -- reserve extra sauce for rice)
3 teaspoons (2 packets) Sazon (see note in recipe for how to make your own)
2 (15 ounce) cans BUSH'S® Garbanzo Beans, rinsed and drained
2 ½ cups low sodium vegetarian broth (or water)
For the rice:
2 teaspoons olive oil
1/3 cup very finely diced yellow onion
1/3 cup very finely diced green bell pepper
¼ cup finely diced cilantro
2 cloves garlic, minced
½ cup no salt added tomato sauce
3 teaspoons (2 packets) sazon seasoning (see note in recipe for how to make your own)
1 (15 oz) can green pigeon peas** (see note in recipe for a sub)
3 cups water
2 cups basmati white rice
To garnish:
Extra fresh chopped cilantro
Avocado slices
Tostones

Steps:

  • First make your Sofrito: Sofrito in Spanish means sauce -- very traditional in many of the main staple foods in Puerto Rico: Add olive oil to a medium pot and place over medium heat. Once oil is hot, add in onion, green bell pepper, cilantro and garlic. Saute until onions are translucent and green peppers soften, about 2-4 minutes. Bring heat to low and add tomato sauce, sazon and simmer for 2-3 minutes until sauce comes together.
  • Add in the chickpeas beans and broth and simmer uncovered over low heat while you cook the rice, stirring occasionally, so that the spices infuse with the beans. If you notice the liquid getting too low, it probably means you were simmering at too high of a heat, but no worries you can simply add another ½ cup water or broth.
  • While the chickpeas are simmering with sofrito, start making the rice: Add oil to a medium pot and place over medium heat. Once oil is hot, add in onion, green pepper, cilantro and garlic. Saute until onions are translucent and green peppers soften, about 2-4 minutes. Bring heat to medium-low and add tomato sauce, sazon and simmer for 2 minutes until sauce comes together.
  • Next add in entire can of pigeon peas (with the liquid -- DO NOT DRAIN) add 3 cups water, and bring to a boil. Once it boils, stir in 2 cups of rice, cover, reduce heat to low and simmer 20 minutes or until rice is tender.
  • Taste both the rice and adjust seasonings as necessary, including adding more salt.
  • How to serve: add rice and beans to a bowl with extra sauce from the beans, garnish with cilantro and a few avocado slices -- serve with tostones if you're feeling like a true Puerto Rican! Serves 4-6.

Inspired by the pizza at Bar Del Corso, this Pizza Margherita features tomato sauce, mozzarella, and basil, with just a hint of sea salt.

3 ½ cups all-purpose flour
1 teaspoon salt
1 cup water
1 (.25 ounce) package active dry yeast
1 pinch white sugar
¼ cup flour for dusting
2 cups pizza sauce
20 slices fresh mozzarella cheese
20 leaves fresh basil
olive oil
sea salt to taste

Steps:

  • Stir flour and 1 teaspoon salt in a bowl. Set aside.
  • Mix water, yeast, and sugar in a large bowl. Let stand until yeast begins to form a creamy foam, about 5 minutes.
  • Stir half the flour mixture into yeast mixture until no dry spots remain. Stir in remaining flour, 1/2 cup at a time, mixing well after each addition. When dough pulls together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, then place dough in the bowl and turn to coat with oil. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 1 hour. Punch dough down, divide into 4 equal pieces, and form each into a ball.
  • Preheat oven with a pizza stone to 500 degrees F (260 degrees C).
  • Stretch out and pat 1 dough ball to form a circle 10 to 12 inches in diameter. Place dough on a lightly floured pizza peel. Top with 1/2 cup of tomato sauce and spread to cover within an inch of the edge of the dough. Arrange 5 slices of mozzarella cheese on top of the tomato sauce, then place 5 basil leaves on top. Drizzle pizza with 1 tablespoon olive oil and sprinkle with sea salt to taste. Repeat for 3 remaining dough balls.
  • Slide each pizza onto the pizza stone in the preheated oven. Bake until cheese is bubbly and the underside of the crust is golden brown, 5 to 7 minutes.

1 (750 ml) bottle silver tequila
2 cups Chambord raspberry liquor
1 1/2 cups fresh lime juice
1 cup water
lime slice

Steps:

  • To rim glasses (if desired), moisten the rims of ten 8-oz glasses with a little lime juice.
  • Dip rim of glasses in salt.
  • Put glasses in the refrigerator (if there is room).
  • Combine the first 4 ingredients in a large pitcher (one that holds at least 70 oz).
  • Cover and put in the refrigerator for at least 4 hours.
  • Pour mixture into rimmed glasses.
  • Garnish with lime slices.

1/4 ounce yeast (2 1/4 teaspoons)
4 cups/950 ml all-purpose flour
1 teaspoon/5g salt
3/4 cups/170 ml white wine
2 tablespoons/28 ml extra-virgin olive oil, plus more for frying
1 pound/450 g ricotta cheese
1 cup grated pecorino cheese
1 large ball mozzarella cheese, diced

Steps:

  • For the dough: Break up the yeast in 2 cups lukewarm water and let dissolve completely. Pour the flour and salt onto a smooth work surface and create a well in the middle. Pour the water and yeast mixture into the well, a little at a time, and then mix by drawing some of the flour from the inner edge of the well into the water until all the flour has been drawn in. Once the yeast mixture has been incorporated, work in the wine and oil until you can create a ball of dough. Knead by rolling the dough back and forth, stretching it out with one hand and rolling it back with the other until smooth and almost spongy, about 5 minutes. Cover with a damp dishtowel and leave at room temperature 1 hour (the dough will double in size). Now you're ready to roll it out and make the panzerotti.
  • For the filling: Meanwhile, thoroughly combine the ricotta, pecorino and mozzarella in a mixing bowl.
  • For assembling: Roll the dough out flat or run through a pasta machine to create 2 long, 3-inch-wide sheets. Lay 1 sheet of dough on a floured work surface and place small dollops of cheese filling 3 inches apart. Lay the second sheet of dough on top and pinch the dough in between the cheeses. Cut out the individual pockets using a knife. Fry in olive oil, and then let cool before serving.

1/2 lemon, quartered
1 pinch ground cinnamon
ice
2 ounces white tequila
3/4 ounce elderflower liqueur
1 1/2 ounces apple juice
1 cinnamon stick

Steps:

  • In a cocktail shaker, muddle the lemon quarters with the ground cinnamon.
  • Add ice and the tequila, elderflower liqueur and apple juice and shake well.
  • Strain into an ice-filled rocks glass and garnish with the cinnamon stick.
