1 C. chopped razor clams (reserve the liquid)
1 bottle flat beer
1 1/2 C. pancake mix
6 green onions - cut very thin, use greens
1/2 green pepper - cut very thin
1 stalk celery - cut very thin
I added 2 T grated parmesan to batter and used coconut oil to fry in.

Steps:

  • Mix onions, celery, green pepper and pancake mix together. Add clams and juice to other ingredients, then add beer till you have a very thick mixture that can be dropped from spoon into hot oil at 375 . You may not need all the beer because of the clam juice. Drop by spoonful in oil - cook 2 min. per side - test, if not cooked- drop by smaller spoonfuls.

6 large razor clams, minced fine with a cleaver or put through a grinder coarsely (approx. 1 to 1-1/2 cups)
1/4 cup unbleached all-purpose flour
1/2 tsp. baking powder
1 egg, lightly beaten
olive oil
butter

Steps:

  • In a bowl, combine flour, baking powder, egg with clams; mix well until batter is well blended. In a wide frying pan, heat butter and oil over medium high heat until it foams but doesn't brown. Drop clam batter into hot fat by heaping tablespoonfuls, adding as many spoonfuls as will fit without crowding. I usually get 6 to 7 or 8 fritters. Cook, turning once, until fritters are browned on both sides (less than a minute per side). Salt to taste and serve immediately on heated plates. Serves 2.

I created this recipe after thinking about my two favorite fritter recipes. I decide to combine them into one.

4 eggs
1 cup milk
1 ½ cups diced zucchini
8 ounces chopped razor clams
1 small onion, diced
1 clove garlic, minced
½ cup bread crumbs
½ cup all-purpose flour
2 tablespoons chopped fresh parsley
1 pinch salt and black pepper to taste
1 cup oil for frying
2 tablespoons butter

Steps:

  • Whisk together the eggs and milk in a bowl until evenly blended. Mix in the zucchini, razor clams, onion, and garlic; set aside. Stir together the bread crumbs, flour, parsley, salt, and pepper in a separate large bowl. Pour the egg and vegetable mixture into the flour mixture and stir until well combined.
  • Heat oil and butter in a large, deep skillet over medium-high heat. Drop fritter batter by spoonfuls into the skillet in batches of 4. Cook until golden brown on the bottom; flip and cook until the other side is golden brown. Drain the fritters on a paper towel-lined plate.

How to make Oregon Razor Clam Fritters by Kathleen Morrison

Number Of Ingredients 12

2 cups razor clams, cleaned, chopped
1/4 cup reserved clam juice
7 tbsp. flour
1/4 tsp. baking soda
1/2 tsp. salt
Black pepper
lemon pepper
5 eggs, lightly beaten
6 scallions, finely chopped
1 tsp. parsley
2 tbsp. finely chopped green pepper
1/2 tsp. Worcestershire sauce

Steps:

  • In a medium bowl, combine all ingredients and mix well. Heat 3 to 4 cups of peanut oil to 360°F and drop mixture by spoonsful into hot oil, frying until golden brown. Remove with slotted spoon and drain on absorbent paper, repeating until all are done. They are best served immediately but can be kept warm in a 250°F oven for 30 minutes. Serve with lemon wedges, tartar sauce or seafood cocktail sauce.
