This simple raw kale salad is pretty much the cleanest, healthiest, simplest salad on the planet, but it also comes together so quickly that it's a perfect way to inject some serious nutrition into any lunch or dinner-even on a weeknight.

1 bunch kale, stems removed and torn into bite-sized pieces
1/2 ripe avocado
Juice of 1/2 lemon
Salt and pepper, to taste

Steps:

  • Place the kale in a large bowl. Using clean hands, squeeze the avocado half into the bowl and continue massaging the avocado into the kale until the leaves relax and are all coated in avocado-about five minutes.
  • Squeeze in the half of lemon juice, season with salt and pepper and then toss to coat. Serve as is or top with other yummy salad toppings.

16 cups fresh kale, thinly sliced (about 1 pound)
3 tablespoons fresh lemon juice
1/4 cup extra virgin olive oil
1/4 cup dried currants or 1/4 cup raisins
1/2 cup pecorino romano cheese, finely shredded (2 oz) or 1/2 cup parmesan cheese
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Place all of the ingredients into a large serving bowl; toss.
  • Let rest 5 to 10 minutes for flavors to develop; toss again before serving.
  • If desired, add more cheese, salt or pepper.

These raw salads are super healthy, crunchy and quite delicious. We are hooked on them.

1 bunch kale
1 tablespoon olive oil
1/4 teaspoon celtic sea salt
1 lime, juice of
1 teaspoon balsamic vinegar
1 tablespoon red onion, finely chopped
1 orange, peeled and sliced

Steps:

  • Chop the kale into thin ribbons (almost like a chiffonade).
  • Drizzle the kale with olive oil and sprinkle with salt.
  • Massage the kale with your hands to soften it, then allow it to sit for 5-10 minutes.
  • Add the lime juice, vinegar, onion and orange.
  • Allow to marinate for 10 minutes.
  • Serve.
