- Wash jalapeno and sliced them lengthwise.
- Remove the seeds from each half.
- In a small bowl, mix together the Monterey Jack cheese, cream cheese, and the bacon bits.
- Fill each jalapeno half with about four or five teaspoons of the Monterey Jack cheese and cream cheese mixture.
- Mix flour, egg, milk, salt, and pepper to taste in a deep plate (for example, a pie plate).
- Place breadcrumbs in another deep plate.
- Roll each jalapeno half in egg mixture to coat.
- Roll the coated jalapeno in breadcrumbs until covered.
- Place the Rattlesnake Bites in the freezer for at least 30 minutes. This will firm up the filling, making it easier to fry the bites.
- Deep fry in hot oil until golden brown.

- Preheat oven to 350 degrees.
- Wash and dry jalapenos.
- Trim the top of each jalapeno and dig out seeds. Discard seeds and tops.
- Mix together cream cheese and garlic powder.
- Fill each jalapeno with cream cheese. (I use a piping bag.).
- Mix together bisquick, sausage, and cheddar cheese.
- Cover each jalapeno with a small portion of the sausage mixture. Making sure the pepper is completely covered and there are no cracks.
- Dip each jalapeno in the beaten egg and then roll in the shake n' bake.
- Place on a lined cookie sheet (make sure you use one with an edge) and bake for 30 minutes or until golden brown.
- * The amount of jalapenos you use is relevent to the size of your jalapenos. The bigger the jalapeno the less this recipe will make.
- * The bigger jalapenos seem to be tougher overall when eating than the smaller ones.

UNO'S RATTLESNAKE PASTA COPYCAT
We really enjoy Pizzeria Uno's Rattlesnake Pasta but eating out all the time gets expensive. I found this recipe online and we loved it. Next time I'll probably cut back to about 6 oz of the colby jack cheese, but it's definitely a keeper! (Edited the recipe to decrease the flour a little and the Italian seasoning after suggestions from raters)

- The ingredients are in three groups. Above the penne pasta are the ingredients for the chicken. The penne pasta is in its own group. The ingredients below the penne are for the sauce.
- In a large skillet, melt 2 tablespoons of butter. Add minced garlic and Italian seasoning and cook for about 1 minute. Then add the chicken, cooking until done.
- Set chicken aside.
- Cook one pound of penne pasta according to instructions on package, removing from the water just shy of al dente.
- In the same pan the chicken was in, melt 4 tablespoons of butter. Add garlic and cook for about 30 seconds.
- Add the flour, salt & pepper all at once, to make a roux. Stir and cook for about 2 minutes.
- Add the milk and half-and-half to the roux, stirring constantly until smooth and thickened, about 5-6 minutes.
- Add the cheeses and stir until melted.
- Stir in chicken and jalapeno peppers.
- Toss with pasta.

- Wash rattlesnake meat thoroughly through a colander and marinate with soy sauce overnight in a plastic bag in the refrigerator.
- Spray olive oil in a heated, nonstick coated wok and sear marinated meat. Set meat aside.
- Brown the bacon in the wok. When the bacon is nearly done, add bell peppers and onion and cook until the vegetables are translucent and tender. Add the eggs and stir constantly until they are firmly set. Add rattlesnake to mixture and cook on medium heat for about 10 minutes. Stir in cooked rice, garlic seasoning and pepper, to taste. Turn heat down to keep rice from sticking to wok and mix ingredients well before serving.

JIMMY SCHMIDT'S RATTLESNAKE RIBS

- Combine all the braising liquid ingredients in a large pot. Stir well, and bring to a simmer over medium heat. Add the ribs and simmer until tender, but not so that they're falling apart, about an hour and 45 minutes. When done, carefully transfer the ribs to a baking sheet. Combine all the spice ingredients in a medium-size bowl, and stir to form a paste (add more beer if it's too dry). Rub the paste over all surfaces of the ribs. Wrap each slab in aluminum foil, dull side out, and refrigerate until ready to cook. Preheat the oven to 400°F, and prepare hot coals for grilling. Place the rack three to four inches from the heat. Cover a baking sheet with aluminum foil, and arrange the ribs on the foil. Coat the ribs with two cups of the barbecue sauce, and bake on the center rack of the oven for 10 minutes. Transfer the ribs to the grill, and cook long enough to char. Serve immediately, with the remaining one cup barbecue sauce on the side. Serves four. For BBQ Sauce: Combine all the ingredients in a medium-size bowl, and whisk until the sauce is well-blended. Adjust seasonings to taste. Makes three cups.

- Add fettuccine and cook for 8 to 10 minutes or until al dente; drain.

- 1. Cut off stem end of jalapeño; remove seeds. Cut peppers in half lengthwise. Stuff each jalapeño half with cream cheese, then freeze them for at least 30 minutes.
- 2. When you are ready to cook, encase each filled, frozen pepper half in one-sixth of the sausage, being certain to completely encase the cream cheese. Wrap each "egg" in a slice of bacon.
- 3. Generously sprinkle each "egg" with with paprika and freshly ground black pepper. Place in a baking dish (lined with foil, if desired, to aid clean-up) or on a broiling pan or on a grill.
- 4. Bake at 350 degrees F for 35 - 45 minutes. Remove to paper towels to drain excess grease before serving.

- Put the ribs, beer and salt and pepper in a pyrex dish and cover with foil.
- Place in a 400 degree oven for about an hour.
- In the meantime, make your sauce by placing the garlic cloves and the whole lime (cut in quarters) in the food processor.
- Pulse until the mixture is pureed.
- Add the chili garlic sauce, soy sauce and dijon mustard.
- Pulse to combine.
- Get your grill set on medium heat and grill the ribs indirectly for an additional hour.
- Or less, depending on how tender the ribs are (you want them to be falling off the bone ultimately).
- Mop with the beer that you tenderized them in every so often, so they don't become dry.
- In the last 10-15 minutes of grilling, mop the ribs with the sauce.
RATTLESNAKE EGGS

- Cut 10 fresh jalapenos in half, removed seeds. Set aside. Dice last jalapeno very fine, mix with cream cheese.
- Fill halved jalapenos with the cream cheese mixture. Wrap each stuffed jalapeno with one piece of bacon, ensuring entire jalapeno is covered. Place toothpick through the bacon and pepper to ensure bacon cooks properly.
- Place foil on grill to minimize grease droppings (you want the jalapenos to cook in the bacon grease on the grill). Cook at 350-375°F for about 5 minutes on each side or until bacon is crisp. Remove toothpicks and serve.
