RASPBERRY CORDIAL
Raspberry Cordial is a sweet and tart drink made with fresh raspberries. You can drink it alone or add it to some soda water for a sparkling treat!

Steps:
- Combine raspberries and sugar in a saucepan.
- Cook on medium-high heat until all the sugar has dissolved, about 20 minutes. Mash any remaining berry pieces.
- Pour the mixture through a fine mesh strainer. Strain twice if you want to ensure no pulp gets through. Add the lemon juice from two of the lemons.
- Boil the water, and then add it to the raspberry syrup in a large pitcher. Let the mixture cool, and then chill it all the way in the fridge.
- When you are ready to serve, slice the remaining lemon. Pour cordial into glasses and top with a lemon slice.

- Put the raspberries in a pan with the sugar and vinegar. Mash over a low heat for 10 mins until smooth and syrupy. Rub through a sieve into a clean pan.
- Tip the seeds from the sieve into a bowl and stir in 300ml water, then sieve again to remove the last of the pulp from seeds. Pour the liquid into the pan with the sieved pulp, stir well and boil for 1 min. Pour into small sterilised bottles and seal. The cordial will keep unopened for a few months. Once opened, store in the fridge.

- Rinse the berries and air-dry on paper towels. Place berries in a 6-cup jar; set aside. In large saucepan, combine vinegar and sugar; bring almost to a boil over low heat, stirring constantly, until sugar is dissolved. Do not boil. , Pour hot vinegar mixture over berries; cover jar tightly and let stand at room temperature 48 hours. Strain through several layers of cheesecloth into a sterilized bottle or jar. Seal tightly with a cork or lid. Store in cool dark place.
