Had some leftover sauce from dinner tonight and wondered, "How would this go on a turkey sandwich?" The answer? Awesome! Definitely use mild Cheddar, though, so the cheese doesn't overpower the sauce, which is the real star of this sandwich. 1 lb turkey, sliced
4 ounces mild cheddar cheese, sliced (basically 4 1-oz. slices)
shredded lettuce, to taste (yeah, it won't be in the nutritional info, but it's basically all water anyway)
4 kaiser rolls (potato bread works great at holding the sauce) or 4 other bread (potato bread works great at holding the sauce)
1/4 cup honey
1/4 cup olive oil
1/4 cup raspberry preserves
2 teaspoons rice wine vinegar
1 teaspoon yellow mustard
1/2 teaspoon dill, dried

Steps:

  • Mix the sauce ingredients together (this might take a few minutes to get the preserves completely broken down into the other liquids). Put the turkey, cheese, and lettuce on the rolls (or your other bread of choice), then add the sauce liberally. Put the sandwiches together and enjoy!

2 tablespoons butter, divided
1 large Granny Smith or Honeycrisp apple, cut into 1/4-inch slices
1/2 teaspoon sugar
1/4 teaspoon ground cinnamon
1/2 medium sweet onion, sliced
1/4 cup whole-berry or jellied cranberry sauce
4 ciabatta rolls, split
1 pound cooked turkey, sliced
8 slices Camembert or Brie cheese (about 8 ounces)
3 cups arugula (about 2 ounces)

Steps:

  • Preheat broiler. In a large skillet, heat 1 tablespoon butter over medium heat; saute apple with sugar and cinnamon until crisp-tender, 3-4 minutes. Remove from pan., In same pan, melt remaining butter over medium heat; saute onion until lightly browned, 3-4 minutes. Remove from heat; stir in sauteed apple., Spread cranberry sauce onto cut side of bottom portion of rolls; layer with turkey, apple mixture and cheese. Place on a baking sheet alongside roll tops, cut side up., Broil 3-4 in. from heat until cheese begins to melt and roll tops are golden brown, 45-60 seconds. Add arugula; close sandwiches.

2 tablespoons butter, melted
4 slices sourdough bread
2 slices swiss cheese
1/2 lb deli turkey
1 bunch arugula or 1 bunch Baby Spinach, stems trimmed
2 tablespoons raspberry jam

Steps:

  • Brush one side of 2 bread slice with butter.
  • Place slices, butter sides down on panini grill; top with turkey, cheese and arugula. Spread 2 bread slices with jam and top sandwiches, jam side down. Brush remaining bread slices with butter.
  • Close grill and cook sandwiches over medium heat 4 to 5 minutes, until bread is crisp and cheese is melted.

4 italian ciabatta rolls, split (or 8 slices ciabatta bread)
8 tablespoons raspberry jam
1 -2 tablespoon chopped chipotle chile in adobo, more to taste
lettuce
1 lb sliced deli smoked turkey
4 slices provolone cheese

Steps:

  • In a small bowl, stir together the raspberry jam with the chopped chipotle chiles.
  • Spread each slice of bread with about 1 tablespoon of the raspberry-chipotle mixture.
  • Assemble each sandwich with lettuce, turkey and a slice of Provolone cheese.
  • Slice in half and serve, or wrap in cling wrap and refrigerate until serving time.

4 thin slices fontina cheese
2/3 lb sliced cooked turkey breast
8 slices turkey bacon, crisply cooked
1 medium red pear, thinly sliced

Steps:

  • Heat panini maker as directed by manufacturer.
  • On each of 4 slices of bread, place 1 cheese slice. Top each evenly with turkey breast. Top turkey breast with turkey bacon. Place single layer of pear slices on each.
