Welcome to heaven. This is one of the best desserts I have ever made. They are like Magic Bars but with different ingredients.... stuff I had left from Thanksgiving brunch. Just a tip, I found it easier to spread the raspberry jam after I had stirred it up a bit first. This is some tasty stuff right here!

2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup melted butter
1 (14 ounce) can sweetened condensed milk
1 1/4 cups seedless raspberry jam
1 1/3 cups flaked coconut
1 cup chopped cashews
1 cup white chocolate chips

Steps:

  • In a small bowl, combine the graham cracker crumbs, butter and sugar and stir with a fork.
  • Press crumb mixture into a 9x13 pan. Flatten out with the bottom of a cup measure.
  • Drizzle and spread condensed milk over the bread crumbs.
  • Place in the freezer for 10 minutes to firm up a little.
  • Spoon and gently spread raspberry jam over the top.
  • Sprinkle coconut cashews and white chocolate chips over the top.
  • press down gently with your hands.
  • Bake at 350 for 35 minutes until coconut gets goldden brown.

This is a delicious bar cookie with a raspberry and chocolate layer between a shortbread bottom layer and a crumb topping top layer. These are Christmas tradition at our house.

2 1/2 cups flour
1 cup sugar
1 cup butter, chilled and cut into chunks
1 -2 cup raspberry jam
1 -2 cup milk chocolate chips
1 1/3 cups flour
1 cup butter, chilled and cut into chunks
1 cup sugar
1 cup pecans, chopped super fine

Steps:

  • Combine shortbread layer ingredients with a fork or food processor until crumbly.
  • Press into the bottom of a buttered 9x13 baking dish.
  • Bake for 20-25 minutes at 350*, until lightly browned. Remove and let cool for 10 -15 minutes.
  • Then spread the jam over the baked shortbread layer.
  • Sprinkle chocolate chips over jam layer.
  • Combine Crumb topping ingredients with a fork or food processor until crumbly then sprinkle over chocolate chip layer.
  • Bake at 350* for 15-20 minutes. Until top layer is lightly browned.

Steps:

  • mix crumb layer and pat into a buttered 9x9" pan.
  • bake approximately 10 minutes at 350* til slightly browned -- for bar mixture.
  • mix all ingredients together.pour over baked crumb layer --
  • bake again at 350* for 20-25 minutes or till brown --
  • cool and cut into bars.

Found the original recipe in King Arthur Flour's Baking Companion. I reduced the sugar content and I prefer them that way. You may also melt some chocolate chips and spread over the bars. You won't regret it!

8 tablespoons unsalted butter (1 stick/4 oz.)
1/4 cup dark brown sugar (2 oz.)
1 cup all-purpose flour (4.5 oz.)
1/4 teaspoon salt
1 cup dark brown sugar (8 oz.)
1 tablespoon all-purpose flour
1/4 teaspoon baking powder
2 large eggs, well beaten
1 cup shredded coconut, sweetened/unsweetened (3.5 oz.)
1 cup chopped nuts (I use almonds, 4 oz.)

Steps:

  • Preheat oven to 300F.
  • Cookie Layer: In a large mixing bowl, cream butter and sugar until smooth.
  • Stir in flour and salt.
  • Mixture will be crumbly.
  • Pat the mixture into a lightly greased 9x13 pan.
  • Bake for 10 mins, while you prepare the topping.
  • Increase the oven temperature to 325F.
  • Topping: Combine sugar, flour and baking powder in a medium mixing bowl (I've used the same bowl without ill result).
  • Stir in the eggs, mixing until smooth.
  • Add coconut and nuts, mix until well-combined.
  • Spread the topping onto the cookie layer, as evenly as possible (wet your fingers and spread).
  • Bake the bars for 30 mins, until golden brown.
  • Remove from oven and let them cool (in the pan).
  • Sprinkle with confectioners' sugar, if desired.
  • Or spread melted chocolate chips over the bars.
  • Cut them into 2 1/4 inch bars when completely cooled.

1 ½ cups graham cracker crumbs
½ cup brown sugar
¼ teaspoon ground cinnamon
½ cup butter, melted
1 (8 ounce) package cream cheese, softened
¼ cup confectioners' sugar
1 teaspoon vanilla extract
1 (3 ounce) package raspberry-flavored gelatin mix (such as Jell-O®)
1 cup boiling water
1 tablespoon lemon juice
2 cups frozen raspberries
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Combine graham cracker crumbs, brown sugar, and cinnamon in a bowl; stir in melted butter. Set aside 1/2 cup of graham cracker mixture; press remaining mixture into a 9x13-inch dish. Chill crust until firm, about 30 minutes.
