- Place raspberries and sugar in a food processor; cover and process until pureed. Strain, reserving juice and discarding seeds., In a small pitcher, combine the club soda, lemon juice and raspberry juice. Serve in tall glasses over ice. Garnish with lemon slices.

RASPBERRY CHAMPAGNE SPRITZER
Recipe I found in US magazine, and want to try. By Padma Lakshmi, author of Tangy Tart Hot & Sweet. Seems easy, and I'm going to try it with a sparkling juice.

Steps:
- Slice the whole strawberries vertically, just halfway up to the crown. Set aside to use as garnish.
- Just before serving, place a tablespoon of sorbet in the bottom of a champagne flute. Place the mint leaves and some chopped strawberries in the glass and pour in the champagne, being careful not to full it so much that it froths over.
- Garnish each glass (makes 4-6 with a sliced strawberry and serve immediately.
- *I had to enter a size for the bottle of champagne, but I'm not sure how much is in a bottle. Just use a standard size bottle of champagne.

- Bring vinegar and sugar to a boil in a small saucepan over medium heat. Boil, stirring occasionally, until sugar is dissolved, about 1 minute. Set syrup aside to cool. Put syrup in a pitcher; stir in seltzer, add ice, and serve.
ELDERFLOWER & RASPBERRY SPRITZER

- Soak gelatine leaves in cold water. Dissolve the gelatine in a measuring jug in the hot water from the kettle. Add the elderflower cordial and top up with sparkling white wine to make 450ml of liquid in total. Drop a few raspberries into six tall glasses and fill to about a third with the elderflower syrup. Leave to set completely, then add a few more raspberries and some more elderflower syrup. Repeat again until the glasses are nearly full to the top.
