Forget the cheese, these golden and sweet quesadillas are filled with a chocolate hazelnut and fruit surprise.

Four 8-inch flour tortillas, cut in half
1 large egg, beaten
1/2 cup chocolate hazelnut spread
Eight 1/4-inch-thick slices of fresh fruit such as banana, strawberry or plum or 8 marshmallows
3 tablespoons unsalted butter, melted
Confectioners' sugar, for dusting

Steps:

  • Lay 1 tortilla half on a clean work surface with the rounded side closest to you. Brush the edges of the tortilla with egg. Place 1 tablespoon of chocolate hazelnut spread in the center of the tortilla and place a piece of fruit or marshmallow on top. Fold one side of the tortilla half way over the filling so that the corner is in the 6-o'clock position, press to seal. Fold the other side over the filling so that the two edges overlap slightly and the corner is also in the 6-o'clock position, press to seal. The quesadilla will look like a triangle-shaped hand pie. Repeat with the remaining tortilla halves and fillings.
  • Melt half the butter in a large nonstick skillet over medium heat and cook half of the quesadillas until deep golden brown, about 2 minutes per side. Transfer to a paper towel-lined plate. Wipe the skillet clean and repeat with remaining butter and quesadillas. Dust with confectioners' sugar before serving.

6 ounces cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1 large egg
3 tablespoons lemon juice
1 teaspoon vanilla extract
1 cup frozen raspberries
1 chocolate crumb pie crust
¼ cup heavy whipping cream
2 (1 ounce) squares semi-sweet baking chocolate

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat cream cheese in a large bowl until fluffy. Gradually beat in condensed milk until smooth. Add egg, lemon juice, and vanilla extract; mix well.
  • Arrange raspberries on the bottom of the pie crust and slowly pour cream cheese mixture on top.
  • Bake in the preheated oven until center is almost set, 30 to 35 minutes. Let cool completely, about 30 minutes.
  • Combine cream and chocolate in a small saucepan over low heat, stirring until melted and smooth, 3 to 5 minutes. Pour chocolate glaze over the cooled pie and refrigerate until ready to serve.

2 (10-inch) flour tortillas
2 tablespoons butter, melted
1 medium banana, thinly sliced
1/4 cup semisweet chocolate morsels
3 tablespoons firmly packed brown sugar, plus more for top
1/4 teaspoon ground cinnamon
vanilla ice cream, optional
caramel sauce, optional

Steps:

  • Preheat the grill to medium-high heat. Spray the grill rack with cooking spray.
  • Brush 1 side of a tortilla with some melted butter. Place the tortilla on the grill, buttered-side down. Arrange the banana slices on the tortilla and top evenly with the chocolate morsels. Sprinkle with the brown sugar and cinnamon. Place the remaining tortilla on top to cover the bananas. Brush with more butter and sprinkle some brown sugar on top. Grill until the chocolate is melted and the bananas are soft, 3 to 4 minutes per side. Cut into wedges and serve with ice cream and caramel sauce, if desired. Serve immediately.

Four large flour tortillas
16 ounces of whole ricotta cheese
3/4-cup of confection sugar
One teaspoon of vanilla
Semi-sweet chocolate morsels
Fresh raspberries

Steps:

  • 1. Spread 1/3 of the filling on one tortilla (this is the bottom of the dessert). 2. Sprinkle semi-sweet morsels evenly atop layer of filling. 3. Lay second tortilla on top of chocolate layer. 4. Spread thin layer of filling evenly on top of second tortilla. 5. Cut raspberries in half; layer onto the top tortilla. 6. Add a few more chocolate morsels for aesthetic. Grilling: Set grill to medium heat (approx. 400°F/205°C). Use a grilling spray or wipe the raised rails with oil. Slide the quesadilla off the cutting board onto the grill and close lid. Check in approx. 3-4 minutes by slightly lifting an edge; you'll be looking for sear marks. Quarter in 2-3 minutes. Keep lid closed. Check for firmness of quesadilla. Crispy, firm is perfection. Let stand for 2 minutes. Cut and serve.

  • Whisk 1 1/2 cups flour, 1/4 cup unsweetened cocoa powder, 3/4 teaspoon baking soda and 1/2 teaspoon salt in a medium bowl. In a large bowl, beat 1 1/4 sticks softened butter and 1 cup light brown sugar with a mixer on medium-high speed, 4 minutes. Beat in 1 egg and 1 teaspoon vanilla. 1 cup white sugar
2 eggs
2 teaspoons raspberry extract
½ teaspoon almond extract
¼ cup milk
2 cups all-purpose flour
2 teaspoons baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets.
  • Mash the butter and sugar together in a bowl with a wooden spoon until the mixture is creamy and well blended, and beat in eggs, one at a time. Stir in the raspberry extract, almond extract, and milk. In a separate bowl, stir the flour and baking powder together until thoroughly combined, and gradually beat into the butter-egg mixture.
