GRILLED CHICKEN AND RASPBERRY-SPINACH SALAD
An organic raspberry-spread vinaigrette glazes grilled chicken and dresses the spinach-and-raspberries base of a delightful main-dish salad.

- Heat gas or charcoal grill. In small bowl, stir together fruit spread, vinegar and oil; reserve 1/3 cup for glaze. Set remaining mixture aside.
- Carefully brush grill rack with oil. Place chicken on grill over medium heat. Brush chicken with reserved glaze. Cover grill; cook 5 minutes. Turn chicken over; brush with glaze. Cover grill; cook 3 to 7 minutes longer, brushing occasionally with glaze, until juice of chicken is clear when center of thickest part is cut (170°F).
- Meanwhile, on 4 individual dinner plates, arrange spinach, raspberries, onion and almonds. Cut each grilled chicken breast into slices; place on top of salads. Drizzle with remaining fruit spread mixture.

This was served at our wedding and it was really delicious. I thought all spinach salads were pretty much the same until I tried this dressing.

- Mix the oil into the poppyseeds, dijon and honey.
- Add vinegar.
- Shake well-- this dressing stays emulsified very well.
- You can toss with the rest of the salad ingredients or toss with just the spinach and then garnish the top with the other ingredients, or plate each serving and pour dressing over, whatever you choose.

- Place pecans on baking sheet and toast in oven at 400 degrees for about 5 minutes.
- Mix together dressing ingredients in small glass or bowl and wisk quickly until well blended.
- Layer salad: spinach, avocado, green onions, raspberries, toasted pecans.
- Top with dressing and serve immediately.

- Heat oven to 350°F. Toast sunflower seeds on a cookie sheet for 4 minutes. Whisk together vinegar, honey, herbs, garlic, and shallot. Slowly whisk in oil. Season with salt and pepper and set aside. In a bowl, toss spinach with 2 tbsp vinaigrette. Season with salt and pepper. Toss with sunflower seeds and remaining ingredients and serve.
SPINACH SALAD WITH STRAWBERRIES AND RASPBERRY VINAIGRETTE
Easy and delicious spinach salad. I didn't use all the sugar, or all the oil. The dressing was sweet enough without the whole 1/3 cup of sugar, and I like my vinaigrettes with a little less oil. You can adjust to your own taste.
