The Palouse area of northern Idaho and eastern Washington is known as the "Dried Pea and Lentil Capital of the World". I serve this as a main dish, or as a side dish for picnics and barbecues. I've used the recipe for many years.

2 cups dried lentils (4 cups cooked)
2 teaspoons salt
5 cups water, divided
1 pound lean ground beef (90% lean)
1 envelope onion soup mix
1 cup ketchup
1 teaspoon prepared mustard
1 teaspoon cider vinegar

Steps:

  • Rinse the lentils. In a heavy saucepan, bring lentils, salt and 4 cups water to a boil. Cover and simmer 20 minutes or until the water is absorbed and the lentils are tender. , Meanwhile, cook beef over medium heat in a skillet until meat is no longer pink. Drain excess fat. Stir in soup mix, ketchup, mustard, vinegar and remaining water. Gently stir in lentils. Spoon into a 2-qt. baking dish. Cover and bake at 400° for 30-35 minutes.

1 (1 1/4 ounce) envelope onion soup mix
1 cup ketchup
1 teaspoon prepared mustard

Steps:

  • Wash and drain the lentils.
  • In a saucepan add lentils, salt and 4 cups water; bring to a boil.
  • Cover and simmer 20 minutes or until the water is absorbed and the lentils are tender.
  • In a skillet, cook beef and garlic until meat is browned; drain.
  • Stir in soup mix, ketchup, mustard, vinegar, pepper and remaining water.
  • Gently stir in lentils.
  • Pour into a 2-quart casserole dish.
  • Bake, covered at 400 degrees for 30-35 minutes.

I'm not sure what these have to do with a ranch, (Don't you wonder where some dishes get their names?) but they're good. The ground beef is very optional. I leave it out, to cut down on both cost and calories.

1 quart water
1 lb ground beef (optional)
1 cup catsup
1 (1 1/2 ounce) package onion soup mix
1 teaspoon vinegar
1 teaspoon prepared yellow mustard
1/8 teaspoon pepper
1 cup water

Steps:

  • Put lentils and 1 quart of water in a 3-quart pot; bring to a boil, then simmer for 30 minutes.
  • Brown ground beef, if using, and drain fat.
  • Stir all other ingredients into lentils (do not drain the lentils).
  • Pour into 2 1/2 quart casserole and bake uncovered at 400*F for 30 minutes.

2 tablespoons vegetable oil
1 medium onion, chopped
1 medium green bell pepper, chopped
3 stalks celery, chopped
4 cups water
1 cup dried lentils (green or brown)
1 1/2 cups cooked rice (brown rice is recommended)
1 (6 ounce) can tomato paste
1 (1 1/4 ounce) package taco seasoning mix
1 teaspoon chili powder (or to taste)
1/2 cup crushed tortilla chips
1/2 cup shredded cheddar cheese or 1/2 cup monterey jack cheese

Steps:

  • In a large saucepan, saute the onions, green peppers, and celery in heated oil over medium heat for 5 minutes.
  • Add in the water; bring to a boil.
  • Stir in the lentils; cover, lower heat, and simmer 40 minutes (do not drain).
  • Transfer lentil mixture to a large bowl; add in cooked rice, tomato paste, taco seasoning mix, and chili powder; stir to combine.
  • Transfer mixture to a lightly greased medium-sized casserole dish.
  • Bake, uncovered, in a 350° oven for 20 minutes.
  • Sprinkle tortilla chips and cheese on top.
  • Bake another 5 minutes or until cheese melts.

A hearty comfort casserole of brown rice and lentils, topped off with melted Cheddar cheese and bread crumbs.

2 ¾ cups water
3 cubes vegetable bouillon
1 ½ cups brown rice
2 tablespoons vegetable oil
1 medium zucchini, chopped
1 white onion, chopped
1 ½ tablespoons cumin
2 teaspoons dried oregano
2 cups dry brown lentils
6 cups water
salt and pepper to taste
1 (8 ounce) package sharp Cheddar cheese, grated and divided
¾ cup bread crumbs

Steps:

  • In a saucepan, bring water and bouillon cubes to a boil. Add rice and stir. Reduce heat, cover and simmer for 50 minutes, or until rice is tender and all liquid has been absorbed.
  • Heat oil in a stockpot over medium-high heat. Cook zucchini and onion until tender, but still slightly firm, about 5 minutes. Stir in cumin, oregano, lentils, and about 6 cups water gradually. Bring to a soft boil, and continue cooking until lentils are tender, 45 to 60 minutes, adding water as needed.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix the cooked rice together with the lentils, and season to taste with salt and pepper. Stir in 3/4 of the Cheddar cheese, and transfer mixture into a 9x13 inch pan. Mix remaining cheese together with the breadcrumbs, and spread evenly over the top of the dish.
  • Bake in the preheated oven just until cheese has melted, about 10 minutes.

1 (16 ounce) package dry lentils
2 cups water
1 (29 ounce) can crushed tomatoes
1 cup chopped carrots
1 cup chopped green bell pepper
1 cup chopped fresh mushrooms
1 cup chopped onion
½ cup chopped celery
2 teaspoons dried parsley
2 cloves garlic, minced
1 cup shredded reduced-fat Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread lentils into a shallow 2-quart baking dish. Pour water over lentils. Add tomatoes, carrots, green bell pepper, mushrooms, onion, celery, parsley, and garlic to lentil mixture. Cover dish with aluminum foil.
  • Bake in the preheated oven until lentils are tender, 1 1/2 to 2 hours. Remove aluminum foil and sprinkle Cheddar cheese over casserole; bake until cheese is melted, about 5 minutes more.

Steps:

  • Heat oil in 3-quart saucepan over medium-high heat.
  • Cook onion, bell pepper and garlic in oil, stirring frequently, until vegetables are tender.
  • Stir in water, lentils, tomato sauce and seasoning mix; reduce heat to low.
  • Partially cover and simmer 35 to 40 minutes or until lentils are tender.
  • Heat oven to 400F.
  • Grease 2-quart casserole with shortening.

Even my pickiest eaters really liked this casserole. It is a great vegetarian meal when made with vegetable broth and no bacon and stills taste just as wonderful. Don't be put off by the list of ingredients or the long looking directions. It goes together very easily! I just like to really be specific because I write these recipes up for my 11 year old son to cook for the family.

2 3/4 cups vegetable broth or 2 3/4 cups chicken broth
1 1/2 cups brown rice
1 lb bacon (optional)
2 teaspoons ground cumin
2 teaspoons dried oregano
1 lb dried brown lentils or 1 lb dry green lentils
6 cups water
salt
pepper
garlic powder, to taste
2 tablespoons olive oil
2 zucchini, halved and sliced
1 medium white onion, chopped
1/4 cup lemon juice
8 ounces sharp cheddar cheese, grated and divided

Steps:

  • Bring broth to a boil. Add rice and stir. Reduce heat, cover and simmer for 50 minutes or until rice is tender and all liquid has been absorbed.
  • Dice bacon, if using and lightly sauté (perhaps 5 minutes)in large pot or dutch oven. Add lentils, cumin, oregano, and water. Bring to a boil and reduce heat to a slow simmer. Cook for 45-60 minutes, adding more water if needed.
  • 10-15 minutes before lentils are done, heat oil in frying pan and sauté zucchini and onion until hot yet still crisp (about 5 minutes).
  • Preheat oven to 375 degrees F (190 degrees C).
  • When lentils are tender, add lemon juice, rice, 3/4 of the cheese, and zucchini, mixing well. Add salt, pepper, and garlic powder to taste.
  • Turn mixture into 9x13 dish and top with remaining cheese.
  • Bake for 15-20 minutes.
