1 (4 ounce) package bacon bits (NOT fake bac)
1 red pepper, chopped
1 carrot, shredded
1/4 red onion, diced
2 cups fresh baby spinach leaves
1 cup ranch dressing, homemade or prepared

Steps:

  • Mix vegetables & pasta in a large bowl.
  • Add Dressing.
  • Chill.
  • Eat! :).

1 package (6 ounces) baby spinach
1 small sweet red pepper, julienned
1/2 cup shredded pepper Jack cheese
1 can (2-1/4 ounces) ripe chopped olives, drained
1 green onion, finely chopped
1/3 to 1/2 cup ranch salad dressing

Steps:

  • In a large salad bowl, combine the spinach, red pepper, cheese, olives and onion. Add dressing; toss to coat.

1 ripe avocado, halved and pitted, divided
1/2 cup buttermilk
2 tablespoons chopped fresh dill or 2 teaspoons dried
1 tablespoon white vinegar
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 5-to-6- ounce package baby spinach (about 8 cups)
1 medium red bell pepper, sliced
1 15-ounce can chickpeas, rinsed

Steps:

  • 1. Scoop 1 avocado half into a blender; add buttermilk, dill, vinegar, garlic powder, salt and pepper. Puree until smooth. 2. Cut the remaining avocado half into 1/2-inch chunks. Combine spinach, bell pepper and chickpeas in a large bowl. Add the dressing; toss to coat. Divide among 4 salad plates and top with the chopped avocado.

1/2 cup ranch dressing
1 tablespoon fresh lemon juice
2 cups baby spinach leaves or small broccoli florets
3/4 cup grape tomatoes, halved
1/2 cup sliced cucumber, halved
1/2 cup julienne (matchstick-cut) carrots
2 tablespoons chopped fresh or 1 teaspoon dried basil leaves

Steps:

  • Empty contents of pasta mix (from Suddenly Salad box) into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  • Drain pasta; rinse with cold water. Shake to drain well.
  • In medium bowl, stir contents of seasoning mix (from Suddenly Salad box), the dressing and lemon juice until blended. Stir in pasta and remaining ingredients. Cover; refrigerate until ready to serve. Store any remaining salad covered in the refrigerator.
