TACO EMPANADAS WITH PIE CRUST + VIDEO



Taco Empanadas with Pie Crust + Video image

Taco empanadas are a cinch to make with refrigerated pie crust instead of empanada dough. Make this easy Tex Mex recipe for dinner tonight!

1 lb ground beef ((80/20))
1 red onion (medium, chopped)
2 tbsp Taco seasoning ((See Note 1))
1 cup refried beans ((See Note 2))
1/2 cup cheddar cheese (shredded)
1/2 cup pepper jack cheese (shredded)
4 pie crusts ((frozen/thawed 2 packages double pie crusts))
1 egg (beaten)

Steps:

  • Preheat oven to 400°F.
  • In a large skillet brown ground beef, red onion and Taco Seasoning Spice Blend over medium heat, breaking up to crumble.
  • Add the refried beans and stir in cheese. Set aside to cool slightly. Meat mixture will thicken.
  • On a lightly floured surface, roll out a pie crust to about 1/4 inch thickness. Using a 4 inch round circular mold (I used the refried beans container lid) cut 6 circles, re-rolling dough if needed. Repeat with other pie crusts for 24 circles.
  • Top each dough circle with about 2 tablespoons of the filling. Fold in half and press edges with a fork to seal. (You can use a 4-inch mold or dumpling press if you have one). Place on a lined baking sheet. (See Note 3)
  • Brush the tops and sides with beaten egg then pierce the top of each with a fork. Bake for about 15 minutes or until golden brown.

Butter-flavored crackers make a delicious crust for this Ranch dressing-style quiche. Go easy on dressing mix or pie will be too salty! Prep time doesn't include cooling pie shell. With my modifications, from America's Favorite Casseroles.

2 cups crushed butter flavored crackers (like Ritz)
6 tablespoons butter, melted
6 slices cooked bacon, drained and crumbled
2 cups swiss cheese, shredded
4 eggs
2 cups heavy cream (I use Half & Half)
0.25 (1 1/4 ounce) package ranch dressing mix (up to 1/2 pkg.)
1 tablespoon instant minced onion

Steps:

  • Preheat oven to 375 degrees F.
  • In medium bowl, combine crackers and butter.
  • Press crumb mixture evenly into 10" pie pan or quiche dish.
  • Bake until golden about 7 minutes. Cool on wire rack.
  • INCREASE oven temp to 425 degrees F.
  • Sprinkle cheese over cooled pie crust.
  • In medium bowl, whisk eggs until frothy; add cream, salad dressing mix, bacon, and onions.
  • Pour mixture over cheese.
  • Bake 15 minutes; REDUCE OVEN HEAT to 350 degrees F.
  • Continue baking until knife inserted into center comes out clean, about 20 minutes.
  • Cool for 10 minutes on wire rack before slicing.

enough prepared mashed potatoes for 4 servings
1 egg, slightly beaten
1/4 cup sliced green onions (with tops)
1 pound ground beef
1/2 cup chopped onion
1 (8-ounce) can tomato sauce
1/4 cup sliced ripe olives
2 teaspoons chili powder (to taste)
1/4 teaspoon salt
1/4 teaspoon garlic powder
1 cup shredded Cheddar or Monterey Jack cheese

Steps:

  • Heat oven to 425°. Grease 9-inch pie plate. Place mashed potatoes in a bowl; stir in egg and green onions. Spread and press potato mixture evenly against bottom and side of pie plate. Bake 20-25 minutes or until light brown. Cook ground beef and chopped onion in 10-inch skillet, stirring occasionally, until beef is brown; drain thoroughly. Stir in remaining ingredients except cheese. Cover and cook over low heat 5 minutes, stirring occasionally. Spoon into shell; sprinkle with cheese. Bake 2-3 minutes or until cheese is melted. If desired, garnish with sour cream, green bell pepper, tomato, and avocado.
