This is a perfect base quiche recipe and it's all baked in a super flaky homemade pie crust. Use a combination of milk and heavy cream for the richest, creamiest filling and add your favorites such as bacon, feta cheese, ham, white cheddar cheese, crab meat or spinach.

1 unbaked Flaky Pie Crust (what I used) or All Butter Pie Crust*
4 large eggs
1/2 cup whole milk*
1/2 cup heavy cream or heavy whipping cream*
1/4 teaspoon each salt and pepper*
1 cup shredded or crumbled cheese such as feta, cheddar, goat cheese, or gruyere
up to 2 cups add-ins (see recipe note)
optional toppings for serving: extra cheese, chopped herbs, hollandaise sauce, & freshly ground pepper to taste

Steps:

  • I like to make sure my pie dough is prepared before I begin the quiche. Make pie dough the night before because it needs to chill in the refrigerator for at least 2 hours before rolling out and blind baking (next step).
  • On a floured work surface, roll out one of the disks of chilled dough (use the 2nd pie crust for another recipe). Turn the dough about a quarter turn after every few rolls until you have a circle 12 inches in diameter. Carefully place the dough into a 9-inch pie dish. Tuck it in with your fingers, making sure it is completely smooth. To make a lovely edge, I do not trim excess dough around the edges. Instead, fold the excess dough back over the edge and use your hands to mold the edge into a rim around the pie. Crimp the edges with a fork or use your fingers to flute the edges. Chill the pie crust in the refrigerator for at least 30 minutes and up to 5 days. Cover the pie crust with plastic wrap if chilling for longer than 30 minutes.
  • While the crust is chilling, preheat oven to 375°F (190°C).
  • Line the chilled pie crust with parchment paper. Fill with pie weights or dried beans. Make sure the weights are evenly distributed around the pie dish. Bake until the edges of the crust are starting to brown, about 15-16 minutes. Remove pie from the oven and carefully lift the parchment paper (with the weights) out of the pie. Prick holes all around the bottom crust with a fork. Return the pie crust to the oven. Bake until the bottom crust is just beginning to brown, about 7-8 minutes. Remove from the oven and set aside. (Crust can still be warm when you pour in the filling. You can partially pre-bake the crust up to 3 days ahead of time. Cover cooled crust tightly and refrigerate until ready to fill.)
  • Reduce oven temperature to 350°F (177°C).
  • In a large bowl with a handheld or stand mixer fitted with a whisk attachment, beat the eggs, whole milk, heavy cream, salt, and pepper together on high speed until completely combined, about 1 minute. Whisk in add-ins and then pour into crust.
  • Bake the quiche until the center is just about set, about 45-55 minutes. Don't over-bake. Use a pie crust shield to prevent the pie crust edges from over-browning. Allow to cool for 15 minutes. Top with optional toppings before slicing and serving, if desired. Or you can cool the quiche completely before serving- it's fantastic at room temperature!
  • This quiche makes great leftovers! Cover tightly and store in the refrigerator for up to 4 days.

6-8 strips of bacon (cooked crisp and crumbled)
1 cup shredded sharp cheddar cheese + a little more for sprinkling on top
3 eggs
1/4 cup milk
1/4 cup cream
1/2 cup ranch dressing

Steps:

  • Place the pie crust evenly into a 9" pie dish. Crimp/pinch the edges at the top if desired.
  • Spread the bacon evenly out over the bottom of the pie crust and then sprinkle the shredded cheese evenly out over top of it.
  • In a medium-sized bowl, whisk together the eggs, milk, cream, and dressing until the mixture's smooth and evenly combined. Pour the egg mixture evenly out over bacon and cheese. Wait about 30 seconds for the mixture to 'settle'.
  • Bake the quiche at 375 degrees for 40-50 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
  • Remove the quiche from the oven and allow it to rest for 5 minutes before slicing and serving.

This is a pseudo Southern take on a quiche.

1 tablespoon butter
½ onion, chopped
1 (12 ounce) package spicy ground pork sausage
4 eggs
½ cup Ranch-style salad dressing
½ cup milk
1 (8 ounce) package Cheddar cheese, shredded
1 dash hot pepper sauce
salt and pepper to taste
1 pinch white sugar
1 (9 inch) unbaked deep dish pie crust

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat butter in a large skillet over medium heat. Saute onion until soft. Add sausage, and cook until evenly brown. Drain, crumble, and set aside.
  • In a medium bowl, whisk together eggs, Ranch dressing and milk. Stir in shredded cheese. Season with hot sauce, salt, pepper and sugar.
  • Spread sausage mixture in the bottom of crust. Cover with egg mixture, and shake lightly to remove air, and to level contents.
  • Bake in preheated oven for 15 to 20 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake 45 to 50 minutes, or until filling is puffed and golden brown. Remove from oven, prick top with a knife, and let cool 10 minutes before serving.

1 unbaked Pam's Pie Crust, recipe follows
All-purpose flour, for rolling
8 slices bacon, fried until chewy
2 yellow onions, sliced
2 tablespoons salted butter
8 large eggs
1 1/2 cups heavy cream
Kosher salt and freshly ground black pepper, to taste
2 cups grated sharp Cheddar
2 1/2 cups all-purpose or pastry flour
1 teaspoon kosher salt
1 tablespoon sugar
1 cup (2 sticks) cold salted butter, cut into chunks

Steps:

  • Preheat the oven to 400 degrees F.
  • Roll out the pie dough on a floured surface. Gently lay it in a deep-dish pie pan and press it into the grooves of the pan. Cut off the excess. Set aside.
  • Chop up the bacon into bite-sized pieces.
  • Fry the onions in the butter in a heavy skillet over medium-low heat until deep golden brown, 12 to 15 minutes.
  • Meanwhile, mix the eggs, cream and some salt and pepper together in a large bowl. Add the bacon, onions and cheese and stir to combine.
  • Pour the mixture into the pie shell. Cover lightly with aluminium foil, place on a sheet pan and bake for 45 minutes.
  • Remove foil and bake until the quiche is set and the crust is golden brown, about 10 minutes more.
  • Allow to sit for 10 minutes. Fit for a king or a cowboy.
  • Lightly mix 2 cups of the flour with the salt and sugar in a mixing bowl or a food processor. Cut the butter into the flour using a pastry cutter or by pulsing the food processor. (The mixture should look like large crumbs and begin to cling together in clumps.)
  • Add the remaining 1/2 cup flour and mix lightly or pulse two or three times so as not to overmix the flour. Tip into a bowl. Sprinkle 1/4 cup cold water over the dough and mix with your hands or a wooden spoon until the dough holds together. Shape the dough into two discs.
  • Wrap the dough in plastic wrap and store in the fridge until ready to use. It can also be frozen for up to 6 months.

PAIGE'S QUICHE

2 tablespoons salted butter
2 yellow onions, sliced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 homemade or store-bought pie crust (enough for a deep-dish pan), recipe follows
All-purpose flour, for rolling
1 1/2 cups heavy cream or half-and-half
8 large eggs
Kosher salt and freshly ground black pepper
2 cups grated fontina cheese
8 slices ham, cubed
3/4 cup vegetable shortening, such as Crisco
1 1/2 sticks (3/4 cup) cold salted butter
3 cups all-purpose flour
1 large egg
5 tablespoons cold water
1 tablespoon white vinegar
1 teaspoon kosher salt

Steps:

  • Set a large skillet over medium-low heat and add the butter. Fry the onions in the skillet, stirring occasionally, for about 10 minutes. Add the red and green bell peppers and continue to cook until the onions are deep golden brown, at least another 5 to 10 minutes (maybe longer). Set aside to cool.
  • Preheat the oven to 400 degrees F.
  • Roll out the pie crust on a floured surface and press it into a large, fluted, deep tart pan (or a deep-dish pie pan).
  • Whip the cream, eggs and some salt and pepper in a large bowl, then mix in the cheese, ham and onion-pepper mixture. Pour into the pie crust.
  • Put the pan on a rimmed baking sheet, cover lightly with aluminum foil and bake for 40 to 45 minutes. Remove the foil and continue baking until the quiche is set and the crust is golden brown, 10 to 15 minutes longer. (The quiche will still seem slightly loose, but will continue to set once removed from the oven.) Allow to sit for 10 to 15 minutes before cutting.
  • If using a tart pan, remove the quiche from the pan. Cut into slices with a sharp serrated knife and serve!
  • In a large bowl, gradually work the shortening and butter into the flour with a pastry cutter until it resembles a coarse meal, 3 to 4 minutes. In a small bowl, beat the egg with a fork and pour it into the flour/shortening mixture. Add the cold water, white vinegar and salt. Stir together gently until the ingredients are incorporated.
  • Separate the dough into 2 pieces and place each piece into a large ziptop bag. Using a rolling pin, slightly flatten each ball of dough into a disc (about 1/2 inch thick) to make rolling easier later. Seal the bags and place them in the freezer until you need them. If you will be using the dough immediately, it's still a good idea to put it in the freezer for 15 to 20 minutes to chill.
  • The dough can be wrapped in plastic wrap for storage; it will keep up to a week in the fridge or up to 6 months in the freezer.
