I use the boxed Kellogg's cornflake crumbs for this, you can usually find them next to the Shake and Bake chicken coating mixes, if you are not able to find the boxed crumbs then you can use a processor to crush the cornflakes, reduce the baking time to 25 minutes for strips and for tenders bake only 20 minutes --- LOW-FAT OPTION use a healthy butter alternative in place of butter

1 cup crushed corn flakes
3/4 cup grated parmesan cheese
1/2 teaspoon garlic powder (optional)
1/2 teaspoon black pepper
1 (1 ounce) package hidden valley ranch dry ranch dressing mix
8 boneless skinless chicken breasts
1/2 cup melted butter (you might need a little more)

Steps:

  • Grease a 13 x 9-inch baking dish.
  • Set oven to 350 degrees F.
  • In a shallow dish mix together the cornflake crumbs with Parmesan cheese, garlic powder (if using) black pepper and dry ranch dressing mix.
  • Place the melted butter in a shallow dish.
  • Coat the chicken breast or strips into the melted butter, then roll into the cornflake mixture.
  • Place in prepared baking dish.
  • Bake uncovered for about 30 minutes or until the chicken is cooked through (strips or tenders or chicken strips might take less time).

Here's what you need: chicken breasts, buttermilk, ranch dressing mix, cheese cracker

2 chicken breasts
2 ½ cups buttermilk
1 packet ranch dressing mix
3 cups cheese cracker

Steps:

  • Preheat oven to 425˚F (225˚C).
  • On a cutting board, slice chicken breasts against the grain into strips.
  • Place the chicken strips in a bowl and add in buttermilk and ranch packet. Stir until well-coated.
  • Cover the bowl with plastic wrap and place in the refrigerator for at least an hour.
  • Pour cheese crackers into a resealable bag and crush with a rolling pin until they become finely ground.
  • Open the bag and place a marinated piece of chicken in the cracker crumbs. Coat the chicken with the crumbs and place on a parchment paper-lined baking sheet.
  • Bake for 20 minutes, flipping halfway.
  • Enjoy!

1/2 teaspoon garlic powder
1/3 cup reduced-fat ranch salad dressing

  • In a shallow bowl, combine the cornflake crumbs, Italian seasoning and garlic powder. In another shallow bowl, combine dressing and water. 1 tablespoon vegetable oil
1 (1 ounce) package hidden valley ranch dressing mix
1/3 cup chicken broth
3 tablespoons orange marmalade

  • Cut chicken into strips and saute in oil until brown.
  • Combine dry dressing mix, broth and marmalade and pour over chicken.
  • Cover and simmer for 3 to 5 minutes until done.

1 cup milk
1 egg

Steps:

  • Pre-heat the oven to 350 degrees F. Grease a 13×9 inch baking dish. In a shallow dish combine crushed corn flakes, parmesan cheese, garlic powder, black pepper, and dry ranch dressing mix. In a small bowl beat together eggs and milk. Dip each chicken strip into the egg/milk mixture and then roll in the crushed corn flakes/ranch dressing mixture. Repeat until all chicken strips are well coated. Place onto a greased baking sheet and bake uncovered for 30 minutes or until the chicken is cooked through (the internal temperature has reached 165 degrees). You can also deep fry these. If deep frying the time will be less.
