Number Of Ingredients 16

2 Large Yellow Onions, Chopped
4 Large Carrots, Chopped
4 Large Celery, Chopped
3 Bell Peppers (Green/Yellow/Red), Chopped
6 Andouilles, Sliced
2 Pounds of Boneless Chicken, Sliced
1 Quart of Chicken Broth
2 (28 ounce each) Can of Dice Tomatoes with Juice
2 Teaspoons of Oregano
2 Teaspoons of parsley
2 Teaspoons of Cajun Seasoning
1 Teaspoons of Cayenne Pepper
1 Teaspoons of Thyme
Olive Oil
1/2 Cup Heavy Whipping Cream
3 Cups of Rice

Steps:

  • In a pot, mix the Chicken, Andouilles and Onions with some olive oil. Cook until golden for ~10mn. Add the Celery, Carrots, Bell Peppers and herbs. Cook and steer for another ~10mn. Add the Tomatoes and Broth and cook over medium heat for 2-3 hours. Cook the rice with water. When ready add it to the above mix 10-15mn before serving. Once you're ready to serve, turn off the heat, add the Heavy Whipping Cream, and mix it with a wooden spoon. Voila!
