"Ready, Set, Cook! Hidden Valley Contest Entry" This recipes makes 9 large Cupcakes studded with corn, stuffed with gooey cheese and topped with a sweet tomato glaze. Hidden in the loaf is veggies the kiddies and fussy husbands wouldn't know are inside. Making these healthy for your family. Great to make ahead, will freeze for those busy days, or pack and bring to work for lunch.

1 tablespoon butter
4 ounces baby carrots
8 ounces button mushrooms
6 ounces onions, rough chopped
3 garlic cloves
2 tablespoons tomato paste
1 teaspoon fresh thyme leave
1 cup frozen corn
10 ounces ground pork
1 lb ground beef
2 eggs
3/4 cup breadcrumbs
1 tablespoon Worcestershire sauce
hot sauce, to taste I like to kick it up
1 ounce Hidden Valley® Original Ranch® Dressing and Seasoning Mix, divided in half for meat and glaze
9 ounces mozzarella cheese (for those of us that like it hot) or 9 ounces monterey jack pepper cheese (for those of us that like it hot)
1 shallot, minced
2 tablespoons tomato paste
3 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees.
  • Spray 2 jumbo 6-cup muffin pans.
  • Place carrots, mushrooms, onion and garlic in a food processor and process till very fine.
  • In a large pan melt butter add the processed duxelle mixture and cook over medium heat 10 minutes, stirring when needed add the tomato paste and cook 5 more minutes. Toss in thyme and the frozen corn and set aside to cool.
  • In a large bowl mix the meats, eggs, Worcestershire sauce, hot sauce, and 1/2 of the ranch seasoning together add the duxelle with corn to the meat mixture and mix with clean hands.
  • Divide the mixture in half and place in 9 of the muffin cups place in one ounce cheese in each half filled muffin. Top with the reminder of meat. Pressing down to smooth top.
  • Bake in preheated oven 25 minutes when meat registers 155 degrees.
  • Meanwhile mix the glaze ingredients together adding the other half of the seasoning. Set aside.
  • Remove from oven. Set oven to broil.
  • Brush all the glaze on the muffins.
  • Broil till bubbly.
  • Enjoy.

1/2 lb elbow macaroni
1/4 cup hot sauce
4 tablespoons butter
1 minced shallot
2 eggs
1/2 cup Hidden Valley® Original Ranch® Dressing
2/3 cup milk
1 cup shredded sharp cheddar cheese
1/2 cup breadcrumbs
1/2 cup grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente.
  • Drain pasta.
  • While pasta is draining, return pot to stove top, melt butter, and sautee minced shallots for 2 minutes over medium-low heat.
  • Add hot sauce and stir.
  • Toss the cooked pasta back in and evenly coat with butter, hot sauce, and shallots.
  • Remove from heat and let cool.
  • While the pasta is cooling, whisk together eggs, milk, salt, pepper, and Hidden Valley Original Ranch.
  • Pour the mixture over the cooled pasta and add the shredded sharp cheddar cheese.
  • Stir and combine everything evenly.
  • Pour into a buttered 8x8 baking dish.
  • Mix the grated parmesan and breadcrumbs together.
  • Sprinkle an even layer over the top of the pasta.
  • Garnish with a few splashes of hot sauce.
  • Bake in a 350 degree oven for 20-25 min or until top is golden brown.

12 lbs turkey, rinsed well, patted dry, giblets and liver removed (12-14 lb turkey)
2 (1 ounce) packets Hidden Valley® Original Ranch® Buttermilk Recipe Salad Dressing Mix (1 ounce each)

Steps:

  • Preheat the oven to 350°F.
  • In a small bowl, mix the butter together with one of the packets of seasoning mix until well blended.
  • With clean hands, carefully separate the breast skin from the breast by moving your hand underneath the skin. Spread the butter mixture evenly under the skin. Sprinkle the remaining packet of seasoning mix all over the turkey.
  • Roast the turkey covered for 3 hours, then uncover and cook for another 30 minutes or until juices run clear and an internal temperature of 165°F is reached.

1 (1 ounce) envelope hidden valley ranch dressing mix
1 (8 ounce) package cream cheese, softened
1/2 cup mayonnaise
1/2 cup milk
10 ounces sharp cheddar cheese, grated
parsley or nuts

Steps:

  • Mix salad dressing mix double strength (using the 1/2 mayonnaise and 1/2 cup milk).
  • Blend in cream cheese with mixer.
  • Gently stir in cheddar cheese.
  • Form into a ball (If too soft place in freezer for a hour).
  • Garnish with poppy seeds, parsley, nuts, or your choice of topping.

I like to serve over buttered egg noodles with steamed broccoli on the side.

1 lb ground chicken breast
1 lb ground pork
2 shallots, peeled and diced fine or 1/3 cup shallot
1 garlic clove, minced
1 cup fresh spinach leaves, packed, chopped fine
1 (1 ounce) package Hidden Valley Original Ranch Dressing Mix
1 cup fresh breadcrumb (do NOT use seasoned dry breadcrumbs)
1/2 cup grated parmesan cheese
1/2 teaspoon fresh ground black pepper
1 teaspoon kosher salt
1/2 teaspoon mustard powder
1/8 teaspoon nutmeg
2 eggs, lightly beaten
1/3 cup sour cream
3 tablespoons vegetable oil (for frying)
2 tablespoons butter (melted if using crock pot)
4 tablespoons flour
1 1/2 cups Hidden Valley® Original Ranch® Dressing
2 cups whole milk
1/2 cup sour cream
1/2 teaspoon fresh ground black pepper
1 teaspoon salt
1/8 teaspoon nutmeg
1/3 cup finely chopped scallion, green tops only, plus more for garnish
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 350.
  • MEATBALLS:.
  • Combine all ingredients, except vegetable oil, in large bowl as listed. Mix well to ensure all ingredients are combined. (I use my hands, clean of course!) Using a small ice cream scoop or a tablespoon, scoop up mixture and form into balls. When all meatballs are all formed - Heat 3 tablespoons of vegetable oil in 12" skillet over medium hi heat. Add as many meatballs to skillet without crowding and fry till all sides are golden brown. (You may need to add more vegetable oil with each batch you fry) Set on rack placed over cookie sheet and continue to fry meatballs until all are done. Place meatballs in oven to finish cooking while you make the sauce.
  • GRAVY:.
  • In large measuring cup or bowl, whisk together Hidden Valley Ranch Dressing, milk and sour cream. Set aside.
  • In large saucepan over medium heat, melt butter. Whisk in flour, mixture will be crumbly and a little dry.
  • Gradually add dressing mixture to pan, whisking constantly. Mixture will begin to thicken almost immediately. Continue to whisk, adding in pepper, salt,nutmeg, scallions and parmesan cheese. Turn heat to lowest setting and cover.
  • Remove meatballs from oven and place on large platter or dish. Spoon gravy over top, sprinkle chopped scallions over top, and serve extra gravy on the side.
