Steps:

  • Whisk 1/2 cup vegetable oil, 1/3 cup rice vinegar, 3 tablespoons sugar, 2 tablespoons soy sauce and 2 teaspoons toasted sesame oil in a large bowl. Break two 3-ounce packages ramen noodles into bite-size pieces (discard the seasoning packets). Add the uncooked ramen to the vinaigrette along with one 16-ounce bag broccoli slaw mix, 1 cup julienned snow peas, 3/4 cup toasted slivered almonds and 4 chopped scallions. Season with salt and pepper and toss. Let sit 1 to 2 hours before serving.

4 cups water
2 (3 ounce) packages chicken flavoured ramen noodles
1 1/2 cups broccoli florets
1 (11 ounce) can condensed cheddar cheese soup
1/4 cup plain yogurt or 1/4 cup sour cream
1/8 teaspoon pepper

Steps:

  • in 3 qt pan over high heat, heat water to boiling.
  • add noodles and broccoli.
  • return to boiling.
  • reduce heat to low.
  • cover and cook 5 minutes or til noodles and broccoli are tender , stirring occasionally to separate noodles.
  • stir in one seasoning pck; drain off most liquid.
  • reserve remaing package for another use.
  • stir in cheese soup, sour cream and pepper.
  • heat through, stirring occasionally.
  • garnish with red pepper strips.
