Steps:

  • Whisk 1/2 cup vegetable oil, 1/3 cup rice vinegar, 3 tablespoons sugar, 2 tablespoons soy sauce and 2 teaspoons toasted sesame oil in a large bowl. Break two 3-ounce packages ramen noodles into bite-size pieces (discard the seasoning packets). Add the uncooked ramen to the vinaigrette along with one 16-ounce bag broccoli slaw mix, 1 cup julienned snow peas, 3/4 cup toasted slivered almonds and 4 chopped scallions. Season with salt and pepper and toss. Let sit 1 to 2 hours before serving.

¾ cup apple cider vinegar

½ teaspoon salt

½ cup dried cranberries

Steps:

  • Whisk ramen noodle seasoning packet, vinegar, sugar, olive oil, salt, and pepper together in a bowl to make the salad dressing. Add ramen noodles and broccoli slaw; toss together. Let sit until flavors meld, 1 to 2 hours.

This broccoli slaw in delicious - given to me by a friend so I don't know where it originated. It's better freshly made and not refrigerated. You can buy broccoli slaw in the prepackaged lettuce area of most supermarkets.

1 (12 ounce) package broccoli coleslaw mix
2 bunches green onion tops, chopped
2 (3 ounce) packages chicken-flavored ramen noodles
1 cup slivered almonds
1 cup sunflower seeds
1 cup oil (I used olive)
1/2 cup white vinegar
1/2 cup sugar

Steps:

  • Mix slaw, chopped onions, noodles only from Ramen noodles (crush them with your hands), almonds and sunflower seeds together in bowl.
  • Make dressing w/oil, vinegar, sugar, and add the 2 packets of flavoring from the Ramen noodles.
  • Add dressing to your taste- I used about half.
  • Note: Instead of white vinegar and sugar, I used 1/2 cup of flavored rice vinegar.

Steps:

  • Before opening noodles, crush into 1 inch pieces. Open packages and set aside flavor packets. Place noodles in bottom of large serving bowl. Top noodles with broccoli slaw, then sprinkle with almonds and sunflower kernels, and green onions. In a separate bowl combine sugar, oil, vinegar, and flavor packets from noodles. Pour over slaw, cover and chill up to 24 hours. Toss before serving.

1 (3 ounce) package chicken-flavored ramen noodles (slightly crushed, noodles and seasoning package separated)
5 cups purchased broccoli coleslaw mix (or use 1/2 medium green cabbage, shredded)
4 green onions, chopped
1/3 cup sunflower seeds (more if desired)
black pepper (to taste)
1 tablespoon sesame oil
1 tablespoon vegetable oil
3 tablespoons rice wine vinegar (or use white wine vinegar)
2 tablespoons white sugar
1/2 teaspoon salt (also add in the spice package from the Ramen noodles)

Steps:

  • Set oven to 350 degrees.
  • Place the slightly crushed Ramen noodles and the sunflower seeds onto a baking sheet in a single layer.
  • Bake for about 8-10 minutes or until lightly browned; cool completely.
  • In a large bowl combine the broccoli slaw with green onions, toasted Ramen noodles and sunflower seeds; toss to combine.
  • For dressing; in a small bowl whisk together, sesame oil, vegetable oil, rice wine vinegar, salt and the seasoning package from the Ramen noodles; mix well to combine.

12 ounces broccoli florets (chopped small-med size)
1 (12 ounce) bag broccoli coleslaw mix (bagged in produce section of grocery store)
1/4 cup sunflower seeds (kernels)
2 (3 ounce) packages ramen noodles (any flavor, I use the 'oriental' flavor, reserve 1 seasoning packet for dressing)
3 tablespoons butter
2 tablespoons olive oil
1/4 cup sliced almonds
3/4 cup vegetable oil (I use Canola)
1/4 cup brown sugar
1/4 cup apple cider vinegar
1/4 cup green onion, chopped (to garnish)

Steps:

  • Heat butter and olive oil in large saute pan.
  • Crush Ramen Noodles and add to pan along with almonds.
  • Saute for approx 5-7 minutes or until noodles and almonds are lightly browned. Set aside.
  • In very large salad bowl, combine broccoli, broccoli slaw and sunflowers.
  • Add toasted noodle/almond mixture and toss.
  • Make dressing by whisking together in a small bowl: vegetable oil, brown sugar, apple cider vinegar and the Ramen noodle seasoning packet.
  • Pour dressing over salad and toss.
  • Top with chopped green onions.
  • Serve immediately for crisp noodle slaw, or refrigerate for one day for softer noodle slaw.

I have made just a few changes to the recipe like not putting the ramen noodles, sunflower seeds and almonds in until served, otherwise they become soft and you want them crunchy. 1 cup purple onion, chopped
1 1/2 cups broccoli florets
1 (6 ounce) can ripe olives, drained and sliced

1/2 cup sugar
1/2 cup cider vinegar
1/2 cup olive oil

Steps:

  • set aside the seasoning for the noodles, crush, place in bowl for later use.
  • Put slaw mix, sunflower kernels, almonds, olives, onions, and broccoli in large bowl, mix. next combine sugar (I use a little less sugar), vinegar, and oil in jar and contents of seasoning package, shake well. 1/2 cup sliced almonds
2 teaspoons sesame seeds
1/2 cup sunflower seeds
1 (3 ounce) package ramen noodles (chicken or beef flavor)
1/3 cup olive oil
2 tablespoons sugar
2 tablespoons vinegar
1/2 teaspoon pepper
1 (10 ounce) bag broccoli coleslaw mix
4 green onions, chopped

Steps:

  • Spread almonds on a cookie sheet & top with sesame and sunflower seed. Toast in oven at 350 for 10 minutes. Put aside to cool.
  • Mix ramen noodle seasoning packet with the oil, sugar, vinegar & pepper.
  • Mix the broccoli and green onions together. Add the seeds and toss.
  • If you are going to serve within several hours, add the ramen noodles at this point and add the dressing.
  • Toss and chill several hours before serving.
  • If you are making the day before, don't add the noodles until several hours before serving.

This recipe originally called for regular prepacked coleslaw, but I really like broccoli, so I adapted it. It also called for 2 packages of noodles (any flavor), but I wanted something more veggie-intensive. And, it used 3/4 cup of oil and real sugar each, which I found to be overpowering and too oily. You may use any flavor ramen noodle you like (though probably not creamy varieties). This makes a nice, light salad that is great for picnics.

1 (3 ounce) package chicken-flavored ramen noodles
16 ounces shredded broccoli (pre-packaged)
10 ounces shredded carrots (pre-packaged)
1/2 cup peanuts (or slivered almonds)
1/2 cup sunflower seeds
1/3 cup vegetable oil
1/3 cup white vinegar
1/4 cup Splenda sugar substitute
1/2 cup dried green onion (diced)

Steps:

  • Toss vegetables, peanuts and sunflower seeds.
  • Combine dressing ingredients in a jar and shake until combined.
  • Cook and drain the ramen noodles, then run under cold water to cool.
  • Add noodles to salad mix, then add dressing. Toss all and allow to rest in the refrigerator for one hour or more. Flavor gets even better with time!
