RUM-RAISIN CAKE

1 stick (4 ounces) unsalted butter
1 cup raisins
2/3 cup plus 3 tablespoons dark rum
2 cups cake flour
1/2 teaspoon cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
3 large eggs
3/4 cup, packed, light brown sugar
1 1/2 cups heavy cream, whipped

Steps:

  • Preheat oven to 350 degrees. Use 1 tablespoon butter to grease an 8-inch tube pan. Place remaining butter in a small saucepan and cook on medium until melted and starting to turn nut-brown. Remove from heat, let sit a few minutes, then pour into a glass measuring cup, leaving any dark sediment in bottom of pan. Set butter aside. Place raisins in a bowl and pour 2/3 cup rum over raisins. Sift flour, cinnamon, baking powder and salt into another bowl.
  • Beat eggs until light. Beat in sugar and continue beating, about 5 minutes, until very light and creamy. Drain raisins, reserving rum. Add flour mixture to egg mixture alternately with drained rum. Fold in brown butter, leaving any sediment in bottom of cup. Fold in raisins. Spread in pan and bake 40 minutes until lightly browned and tester comes out clean. Spoon remaining 3 tablespoons rum over cake. Cool. Remove from pan. Pile whipped cream in center and serve.

1 large navel orange, cut into 8 wedges
1 cup raisins
1/2 cup pecans
1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup buttermilk
GLAZE:
1/2 cup confectioners' sugar
2 tablespoons orange juice

Steps:

  • In a food processor, combine the orange, raisins and pecans. Cover and process until mixture is finely chopped; set aside. , In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla until well blended. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Stir in orange mixture. , Pour into a greased and floured 10-in. flouted tube pan. Bake at 325° for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely., In a small bowl, combine glaze ingredients until smooth; drizzle over warm cake.

1 cup raisins
2 cups water
½ cup butter
1 teaspoon baking soda
½ teaspoon salt
1 cup white sugar
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup chopped walnuts
1 ¾ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 10 x 10 inch baking pan.
  • In a large saucepan boil the raising with the water for 10 minutes. Add the butter or margarine and let cool.
  • In the same pan add the flour, soda, salt, sugar, cinnamon, nutmeg, and chopped nuts (optional), mix well and pour batter into a lightly greased 10x10 inch baking pan
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Serves 8 to 12.

1 ¼ cups water
⅓ cup shortening
¼ teaspoon ground cloves
½ teaspoon ground nutmeg
2 teaspoons ground cinnamon
2 cups raisins
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • In a saucepan, combine brown sugar, water, shortening, cloves, nutmeg, cinnamon and raisins. Bring to a boil, and continue boiling for 3 minutes. Remove from heat and allow to cool.
  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour an 8x4 inch loaf pan. Sift together flour, baking powder, baking soda and salt.
  • In a large bowl, combine the raisin mixture with the flour mixture. Pour into prepared pan.

3/4 c sugar
1/2 c water
1 Tbsp cornstarch
1 c seedless raisins
1/2 c pecans, chopped
1 stick unsalted butter
1/2 c dark brown sugar
1 eggs
2 c all purpose flour
1 1/2 tsp cream of tartar
1 1/2 tsp baking soda
1/2 c milk
1 tsp pure vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Combine half cup of sugar with water and cornstarch in a saucepan. Mix well, cook over low heat until mixture thickens about 5 minutes. Remove from heat. Add raisins and pecans and set aside.
  • 3. Beat the butter until soft. Add remaining sugar and brown sugar. Beat until smooth. Add eggs and beat well.
  • 4. Sift together flour, cream of tartar and baking soda. Add to butter mixture, along with milk and vanilla. Beat well until smooth and batter forms.
  • 5. Spoon half of the batter into a greased 8 inch square pan. Spread raisin/pecan mixture over batter. Cover with remaining half of batter.
  • 6. Bake for 40 minutes or until cake tester comes out clean.

1 cup dried raisins
1 cup (packed) light or dark brown sugar
1 cup water or milk
1/2 cup vegetable shortening or butter
1 teaspoon each ground cinnamon and ginger
2 cups sifted flour, resifted with 1 teaspoon baking soda and 1/2 teaspoon salt
1 cup walnuts, chopped

Steps:

  • Combine the raisins with sugar, water, shortening and spices and simmer for a minute. Cool to room temperature.
  • Preheat the oven to 300 degrees. Lightly grease a 9inch square baking pan. Combine cooled raisin mixture with flour and nuts. Transfer to baking pan and bake 1 hour or until a toothpick when inserted in the center comes out dry. Cool in pan and cut into squares.

1 1/4 cups sugar
1/2 tablespoon baking powder
1 dash salt
1 teaspoon grated lemon peel
1/4 cup butter or 1/4 cup margarine, softened
1 egg, beaten
1 teaspoon lemon juice
1/2 cup milk
3 tablespoons cornstarch
1/3 cup sugar
3 tablespoons cocoa powder
2 egg yolks, lightly beaten
2 cups milk
1 teaspoon vanilla extract
1 cup brown sugar
1 cup granulated sugar
2/3 cup water
2 tablespoons butter or 2 tablespoons margarine
1/3 cup sugar
1/3 cup oatmeal

Steps:

  • FOR THE CAKE: Preheat oven to 400°F
  • Sift together flour, sugar, baking powder, and salt. Mix in lemon peel. Add butter, mixing with fingers to a bread crumb consistency. Add egg, lemon juice, and milk, kneading well. Divide dough into five equal parts. Roll out each part into a circle about 10 inches in diameter. Place circles on greased cookie sheets and bake at 400°F for 6 to 8 minutes, until lightly browned. Let cool.
  • Stack cake layers, spreading each layer with warm Chocolate Cream Filling. Pour Caramel Sauce over top and then sprinkle with Oatmeal Topping.
  • Chill in refrigerator for at least 3 hours before serving. Store in refrigerator. Yield: 8 to 10 servings.
  • FOR THE CHOCOLATE CREAM FILLING: Combine cornstarch, sugar, cocoa powder, and egg yolks, mixing together well. Set aside. Heat milk over hot water. Gradually add cocoa mixture and continue to cook, stirring constantly, until mixture thickens. Remove from heat and stir in vanilla.
  • FOR THE CARAMEL SAUCE: Combine sugars and water in a heavy saucepan and cook over medium heat, stirring constantly, until sugar dissolves. Bring to a boil and let boil for 10 minutes without stirring. Let cool slightly.
  • FOR THE OATMEAL TOPPING: Melt butter over medium heat. Add sugar and oatmeal and cook, stirring constantly, until mixture becomes lightly browned.

My mom always made this cake at Christmas time. She would cut it in bar size pieces and put it with the Christmas cookies. It was always one of my favorites, and my dad's as well. Don't over bake and make sure you keep it in a air tight container until you are ready to eat. Measurements for the frosting are approximates. Only add enough water to make the glaze easily spreadable. These can be frozen for a couple weeks.

  • Cook 1 pound raisins and 1 cup water over medium high heat for 15 minutes.
  • Add 1 cup cold water.
  • In large mixing bowl cream ½ cup shortening and 2 cups sugar.
  • Add 1 teaspoons Salt, 1 teaspoons Ginger, 1 teaspoons Cinnamon and 1 teaspoons Baking soda, mix well.
  • Add raisins and water. Add 4 cups flour. Mix well.
  • Put in a 13x9 inch greased baking pan.
  • Bake in preheated 350 degree oven for 1 hour or until toothpick comes out clean. Cool in pan.
  • Frost with Glaze. Cut into bar cookies.
