POACHED CHICKEN AND VEGETABLES WITH COUSCOUS



Poached Chicken and Vegetables with Couscous image

Number Of Ingredients 11

8 pieces boneless, skinless chicken breast (4 are for Portuguese Chicken recipe)
Salt
1 large carrot, peeled and sliced diagonally into 1/2-inch slices
3 ribs celery, cut into 2-inch pieces on an angle
1 small to medium onion, cut into 1 1/2 inch chunks
1 bay leaf, fresh or dried
4 sprigs fresh thyme
6 cups chicken stock
1 cup instant couscous
10 blades chives, snipped or chopped, garnish
1/4 cup chopped flat-leaf parsley, for garnish

Steps:

  • Season chicken breasts with salt and arrange in a deep, large skillet. Cover chicken with vegetables. Add bay leaf, thyme sprigs, and chicken stock to the pan. Place over high heat and bring to a boil, covered. Reduce heat to simmer and cook for 15 minutes. Remove bay and thyme sprigs. Remove the chicken breasts and cut into slices. Return chicken slices to the pan and adjust seasoning, to your taste. Put the couscous into a heatproof serving bowl. Ladle 1 1/2 cups of the hot cooking liquid over the couscous, cover and let stand for 5 minutes. Remove the lid, season the couscous with salt, and fluff with a fork. Put a scoop of couscous into a serving bowl, top with chicken chunks and vegetables. Cover meat and vegetables with some broth. Garnish each serving with chives and parsley.
  • Refrigerate or freeze the whole breast pieces for Portuguese Chicken.

2 tablespoons extra virgin olive oil
1 bay leaf
1 medium onion, chopped
1/2 medium zucchini, diced
1 small yellow squash, chopped
salt
fresh ground black pepper
1/2 cup canned pumpkin
4 cups chicken broth or 4 cups vegetable broth
1 1/2 teaspoons ground cumin
1 teaspoon coriander seed
2 1/4 cups couscous
1 vine-ripe tomatoes, seeded and finely chopped
2 tablespoons chopped cilantro
2 tablespoons chopped fresh flat leaf parsley
mediterranean flat bread

Steps:

  • Place a large saucepan over med-high heat; add in the first 5 ingredients; season with salt and pepper.
  • Saute and stir frequently for 7-8 minutes.
  • Add in pumpkin and broth; stir to combine.
  • Add in cumin and coriander; bring broth to a boil.
  • Stir in couscous; cover and remove from heat.
  • Let stand 5 minutes, then remove lid and fluff couscous using a fork.
  • Remove bay leaf and add in chopped tomato, cilantro, and parsley.
  • Toss mixture and transfer to a serving platter.
  • Serve with warm Mediterranean flat breads.

1 lime, juiced
4 (8-ounce, 1 1/2-inch thick) portions mahi mahi steak
A drizzle extra-virgin olive oil
Salt and pepper
1 ripe mango, peeled and diced
1 small red bell pepper, seeded and diced
1 jalapeno or serrano, seeded and finely chopped
1 inch fresh ginger root, grated or minced
1/4 seedless (European or English) cucumber, peeled and chopped
20 blades fresh chives, finely chopped
1 lime, juiced
2 cups chicken broth or water
2 teaspoons (1 palmful) curry powder or 1 rounded teaspoon mild curry paste
1/2 teaspoon coarse salt
1 tablespoon extra-virgin olive oil
1 handful raisins
1 cup couscous
2 scallions, sliced on an angle
1 carrot, shredded or grated
1 navel orange, peeled and chopped
2 ounces sliced almonds (available on baking aisle)

Steps:

  • Preheat grill pan or indoor electric grill to high heat. Squeeze juice of 1 lime over fish. Drizzle steaks with a little oil and rub oil into fish to coat. Season steaks with salt and pepper. Cook steaks 5 minutes on each side on hot grill.
  • To assemble salsa, combine all ingredients for salsa in a small bowl.
  • To make couscous, bring broth or water to a boil with curry powder, salt, oil, and raisins. Place couscous in a bowl. Add boiling liquid to bowl and cover. Let couscous stand 10 minutes. Fluff couscous with a fork and combine with scallions, carrot, orange pieces, and almonds.
  • Top fish with salsa and serve with generous portions of curry couscous.
  • Have some gourmet chips on hand for snacking with leftover salsa.

ROAD TO MOROCCO LAMB WITH PINE NUT COUSCOUS

2 1/2 pounds boneless leg of lamb, cut into bite size pieces
1 rounded tablespoon grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
2 teaspoons turmeric, 2/3 palm full
2 teaspoons cumin, 2/3 palm full
1 1/2 teaspoons coriander, 1/2 palm full
1 teaspoon paprika, 1/3 palm full
1/2 teaspoon cinnamon, eyeball it in your palm
1/4 teaspoon ground cloves, eyeball it in your palm
3 tablespoons extra-virgin olive oil, 3 turns of the pan
2 medium onions, thinly sliced
3 cloves garlic, chopped
20 to 24 pitted dates, halved, about 1 cup
1 quart chicken stock
2 tablespoons butter
3 tablespoons pine nuts, a generous palm full
2 cups couscous
4 scallions, chopped

Steps:

  • Place lamb in a food storage bag. Combine the 7 spices in a small bowl. Sprinkle into the bag and seal bag. Shake and evenly coat the lamb pieces in the spices.
  • Heat a large, deep skillet over medium-high to high heat. Add 3 tablespoons extra-virgin olive oil, 3 turns of the pan, then the lamb. Sear the lamb and caramelize the meat all over, 5 to 7 minutes. Add the onions and garlic and cook 5 minutes more. Add the dates and 2 cups of chicken stock to the pan and cover. Cook 7 to 8 minutes more to plump the dates and soften the onions. Remove cover and adjust seasonings.
  • During the last 5 minutes the lamb has to cook, melt butter and toast pine nuts. Add 2 cups stock and bring to a boil. Remove pan from heat, add couscous and cover pan. Let stand 5 minutes. Remove lid and fluff with fork.
  • Serve lamb over couscous in shallow dishes and garnish with chopped scallions.

VEGETABLE STEW (GIAMBOTTA)

1/4 cup extra-virgin olive oil plus some to drizzle
1 bay leaf, fresh or dried
3 cloves garlic, 2 chopped, 1 whole cracked from skin
2 onions, sliced
2 large potatoes, peeled and chopped
1 eggplant, chopped
1 zucchini, chopped
1 red bell pepper, seeded and chopped
Salt and pepper
1 (28-ounce) can fire roasted diced tomatoes
1 cup stock, chicken or vegetable
1/2 cup torn or chopped basil (10 to 12 leaves)
4 (1-inch thick) slices whole-grain crusty bread
1/2 cup grated pecorino

Steps:

  • Preheat broiler.
  • Heat a medium soup pot over medium heat. Add extra-virgin olive oil, bay, chopped garlic and onions and let them sweat out while you prepare the rest of the veggies. Work next to the stove and drop as you chop, in order of longest cooking time: potatoes, eggplant, zucchini, and bell pepper. Season with salt and pepper, cover and cook 10 minutes, stirring occasionally. Uncover and add tomatoes and stock and cook 5 minutes more, to heat through. Turn heat off and stir in basil.
  • Char bread under broiler and rub with cracked garlic then drizzle with extra-virgin olive oil, top with cheese and pepper and return to the broiler for 30 seconds to brown cheese. Serve cheese whole-grain toast with bowls of vegetable stew.

SHISH KABOB WITH YOGURT SAUCE AND LEMON-OLIVE COUSCOUS

1/4 cup extra-virgin olive oil, plus more for drizzling
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon ground turmeric
1 teaspoon dried oregano or marjoram
1/2 teaspoon ground cinnamon
2 tablespoons grill seasoning, (recommended: Montreal Steak Seasoning by McCormick)
2 pounds boneless leg of lamb, cut into 1 1/2-inch cubes
1 large onion, cut into bite-sized pieces
2 green bell peppers, seeded and cut into bite-sized pieces
Salt and freshly ground black pepper
2 cups Greek plain yogurt
2 cloves garlic, peeled and grated or minced
1/4 cup finely chopped mint leaves, a handful
1/4 cup finely chopped parsley leaves, a handful
1/4 cup pine nuts
1 tablespoon butter
1 lemon, zested and juiced
1 1/2 cups chicken stock
1 1/2 cups couscous
1 cup pitted and chopped green olives
Toasted pita, for serving

Steps:

  • Preheat grill or grill pan to medium-high or broiler with oven rack set on second level from the top of oven.
  • Combine 1/4 cup olive oil, just eyeball the amount, with spices and grill seasoning in a shallow bowl or dish. Add lamb to seasonings and coat evenly in the mixture. Skewer the meat on metal skewers and let sit for 10 minutes. Cook on a hot grill or under the broiler for 7 to 8 minutes for medium-rare.
  • Thread the onions and peppers onto skewers, drizzle with oil and sprinkle with salt and pepper. Place on grill or under the broiler for 12 to 15 minutes or until tender.
  • Combine yogurt with garlic, mint and parsley.
  • In a sauce pot toast pine nuts over medium heat, remove and reserve. Add butter, zest of lemon, and chicken stock to pot and bring to a boil. Stir couscous and olives, cover the pot and remove from heat. Let the couscous stand 5 minutes. Fluff couscous with a fork and toss in the pine nuts.
  • Stir the lemon juice into yogurt to thin.
  • Serve meat and vegetables with dipping sauce, couscous and toasted pita alongside.
