Steps:
- Preheat the oven to 400 degrees F.
- Remove the seeds from all of the peppers and cut into 1/2-inch lengthwise strips.
- Set up a breading station: 1 pan of 1 cup of flour, 1 pan of eggs beaten with milk, 2 tablespoons of flour and mustard, and 1 pan of bread crumbs seasoned with cheese, and salt and pepper, to taste.
- Coat the peppers in the flour, then in the egg mixture and then in the bread crumbs.
- Arrange the chili fries on a nonstick baking sheet and roast for 18 minutes, turning once.
- Remove from the oven and transfer to a serving platter.
TEXAS FRIES
My version of the Riscky's BBQ Original. They offer them as an appetizer but I can make a meal of it. While the real thing is best, one serving equals my total monthly fat allotment. I skinnied it down by sauteeing the onions & peppers rather than dropping them in the deep fryer as they do. I also prefer to oven bake fresh cut potatoes.We like them to put the quick back in our step so I pepper heavily. Fork required!

- Bake or fry potatoes, whichever you prefer.
- Pour oil in a large skillet. Add onions & jalapenos & cook, stirring often, till onions are tender, about 5 minutes.
- **We prefer the canned jalapenos because the vinegar seeps into the onions while cooking & flavors the whole dish. If using fresh peppers, you may need either more oil or a dash of vinegar.
- Spoon half the onion/pepper mixture onto a serving dish. Top with hot fries. Add remaining onion & peppers.
- Salt to taste but pepper liberally.
- To make it authentic, serve with ranch dressing for dipping rather than ketchup.

- Place the potatoes onto a baking sheet. Sprinkle them with the grill seasoning and a good drizzle of EVOO. Toss to coat, then transfer to the oven and roast, until crispy golden brown, about 40 minutes. Turn them once halfway through cooking time.
- While the potatoes are roasting, place a large, heavy-bottomed pot over medium-high heat with 2 tablespoons EVOO, about 2 turns of the pan. Add the ground meat to the pan and cook until brown, about 6-7 minutes, breaking it up into small pieces as it cooks using a potato masher or back of a wooden spoon.
- Push the meat to one side of the pan and add the onion, garlic, jalapeño, chili powder and cumin to the pot. Cook until the veggies soften, 5-6 minutes, and season with salt and freshly ground black pepper.
- Add the tomato paste to the pot and cook for about 1 minute, until it smells sweet and has caramelized slightly. Add the hot sauce, Worcestershire and beer or stock to the pot. Bring everything up to a bubble, then reduce the heat and simmer the chili until thickened, about 10 minutes.
- While the chili is simmering, place a medium-size pot over medium-high heat and melt the butter. Sprinkle the flour over the melted butter and cook it for about a minute. Stir the mustard into the butter-flour mixture, then whisk in the milk and stock. Continue whisking the sauce until it has thickened up, then remove the pot from the heat and stir in the cheese until melted. Season the cheese sauce with salt and freshly ground black pepper and reserve.
- In a large salad bowl, whisk together 1/4 cup EVOO along with the red wine vinegar, salt and freshly ground black pepper. Add the lettuce and cucumber to the bowl and toss to combine. To serve, divide the fries between four plates and top each one with some chili-cheese sauce and some salad alongside.

- Combine ranch dressing and half of the taco seasoning; set aside.

- Preheat the oven to 450°F.
- Cook bacon in a medium-sized frying pan oven medium-high heat.
- Take out bacon when crisp and put on a paper towel to dry.
- Pour bacon grease into a bowl and allow to cool slightly.
- Add garlic salt, onion powder, and seasoned salt to the grease and stir to mix. Set aside.
- Arrange the fries on a greased baking sheet and bake for 10 to 15 minutes or until slightly golden.

EMERIL'S BEEF CHILI CHEESE FRIES
A great Super Bowl or teen party snack (or a hearty nosh for anyone)! Make the chili ahead of time, then just dish it up on some cheesy fries and serve! Emeril's original recipe calls for deep-frying shoestring potatoes yourself, but I use the frozen-fry shortcut! I also seemed to need more masa harina than originally called for. Can also be made with vegetarian meat crumbles. Cook time includes chili preparation.

- Season onions with salt and cayenne and saute, stirring, until they begin to wilt, about 2 minutes.
- Add the beef, chili powder, cumin, red pepper, and oregano, season with salt and cayenne, and cook until meat is done (no pink).
- Add garlic, tomatoes, tomato paste and 2-1/2 cups beef stock, bring to boil and reduce heat to medium-low.
- Simmer uncovered about 1 hour, stirring occasionally and skimming fat that rises to the surface.
- Combine masa harina flour with remaining 1/2 cup stock.
- Slowly add to the pot, stirring to blend, which will thicken the mixture.
- Cook for 30 minutes and correct seasoning.
- From here, Emeril deep fries his own shoestring French fries, but I use frozen French fries or waffle fries to save time (and mess!).
- Prepare frozen potatoes as package directs.
- Lower oven heat to 400 degrees F, place fries in bottom of a large glass rectangular baking dish.
- Sprinkle cheeses over the fries and bake for 3 to 4 minutes.
- Remove pan from oven and spoon hot chili over the top of the fries.
- Garnish with sour cream and jalapeños and serve immediately.

- Preheat oven to 450 degrees F.
- Gather your ingredients.
- For the fries: Line a baking sheet with fries and bake 25 minutes to very crispy.
- Stem and gill (scrape underside of caps with teaspoon) the mushrooms and wipe with damp towel to remove grit. Thinly slice the mushrooms. Melt 3 tablespoons of butter in large skillet over medium-high heat and when it foams add the mushrooms. Brown well until meaty in fragrance and well browned.
- Halve, peel and thinly slice onions and peel garlic. In a second large skillet over medium heat, melt 2 tablespoons butter then add the onions and season with salt, white pepper and bay leaf. Cook until tender, 8 to 10 minutes, stirring occasionally. Turn the heat up to medium-high to high, add about 3/4 cup water and let it absorb completely. Then lower heat to low and remove bay leaf.
- While onions cook, grate or chop the garlic. Add to mushrooms along with thyme, salt, black pepper, sherry, Marsala or wine, Worcestershire and soy sauce. Reduce heat to low.
- For the cheese sauce: In a sauce pot, melt butter over medium-high heat. Whisk in flour, add milk and while it thickens grate provolone. Add it and the cheddar in small handfuls to sauce.
- Top the fries with mushrooms, sweet, soft onions, cheese sauce, chopped giardiniera and/or cherry pepper rings and serve. OR layer slices of provolone on a roll with mushrooms, onions and chopped giardiniera.

- Have your GH (Grown Helper) put fries in oven on a cookie sheet. While fries are baking in the oven, have a GH place a sauce pot on the stove and heat it over medium heat. Add butter and melt it. Add the flour and stir. Cook butter and flour together for 1 minute or so. This is called "roux" (like Tiger and Roo with Pooh Bear) and it helps to thicken up sauces. Use a whisk to stir as the milk goes into the pot. Keep stirring until the milk gets thicker. Use a wooden spoon or heat-safe spatula to stir in the cheese. When all of the cheese melts, take the sauce off the heat and stir in 3 squirts of ketchup. This is your SECRET ingredient. When everyone asks what you put in your cheese sauce that makes it taste so good, just say milk and cheese, you can NEVER tell what secret ingredients you add! Tell your GH to keep the secret, too or they can never help you again!
- Pour the sauce over the fries or serve the sauce on the side if you like to dipping better.
