6oz - 1 can tuna, drained
2/3 cup (185g) Greek yogurt
1/3 cup (80ml) vegetable stock
1/2 cup quinoa, uncooked + 1 cup water
1/2 red onion, chopped
1/3 head of broccoli, cut into small florets
Salt to taste
1/4 teaspoon Black pepper
1/4 teaspoon Cumin
1 teaspoon Oregano
2 cloves of garlic, minced
100g (3.5oz) mozzarella cheese, grated

Steps:

  • 1. Rinse the quinoa under cool water, until the water comes out transparent. Put rinsed quinoa in a medium saucepan. Add water, 1/2 teaspoon salt and bring to a boil over high heat. Reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy. Remove from heat and let stand, covered, for 5 minutes.2. Preheat oven to 350F (175C).3. In a bowl, mix together tuna, cooked quinoa, chopped onion, broccoli, Greek yogurt, vegetable stock and spices.4. Transfer into casserole dish. Top with mozzarella. This recipe is a super easy and quick way to incorporate whole grains packed with protein into your diet. You can throw in veggies that need to be used and spice to suit your mood :) It's a flexible dish that you can throw together in a jiffy. I usually substitute water for broth and add extra seasoning.

1 1/2 cups quinoa
3 cups chicken broth
3/4 cup frozen spinach
1/3 onion, diced
1 teaspoon minced garlic (depending on how garlicky you like it!)
1/2 teaspoon italian seasoning
salt (to taste)
6 ounces tuna (splurge on the good kind, it really tastes better)
1/2 cup cheese (optional)

Steps:

  • Combine all ingredients except cheese and tuna in a medium sauce pan.
  • Cover with lid and bring to a boil.
  • Turn down heat and simmer for 15 minutes or until liquid is absorbed. Remove from heat and add cheese and tuna. Enjoy!

Nothing says comfort like a warm tuna casserole. This one uses quinoa which is full of protein and antioxidants!

1 (12 oz.) pkg. Full Circle frozen green beans
1 1/2 cups reduced-sodium chicken broth
3/4 cup dry quinoa, rinsed
2 tbsp. unsalted butter
1/4 cup all-purpose flour
1 1/4 cup skim milk
1 tsp. garlic powder
3/4 cup panko breadcrumbs
3/4 cup shredded reduced-fat Cheddar cheese, divided
1 tbsp. olive oil
2 (5 oz.) cans white tuna in water, drained and flaked
chopped parsley, to serve
paprika, to serve

Steps:

  • Add green beans, broth and quinoa to a large saucepan. Bring to a boil and reduce heat. Cover and simmer, stirring occasionally, 15-20 minutes or until quinoa is tender. Remove from pan.
  • In the same saucepan, melt butter over medium-high heat. Add flour and cook, whisking constantly, for 1 minute. Add milk and garlic powder; continue to cook, whisking frequently, 5 minutes or until thickened.
  • Preheat oven to 350 degrees. In a small bowl combine panko, 1/2 cup cheese and the oil. To a large greased baking dish add quinoa mixture, sauce, tuna and remaining cheese. Stir to combine and top with panko mixture. Bake 20-25 minutes or until bubbly. Sprinkle with parsley and paprika.
