1 cup quinoa, rinsed well
Kosher salt and freshly ground black pepper

1 cup (1/2 pint) grape tomatoes, halved
1/2 cup fresh mint leaves, finely chopped
1 small bunch dinosaur kale, finely shredded
1/2 English cucumber, cut into small dice
1/2 small red onion, thinly sliced
1/2 cup extra-virgin olive oil
Zest of 1/2 and juice of 2 lemons
Zest of 1/4 and juice of 1 orange
2 tablespoons canola oil
1 small Spanish onion, diced
1 cup pomegranate juice
1/4 cup freshly squeezed orange juice
1/4 cup pomegranate molasses
1/4 cup red wine vinegar
3 tablespoons light brown sugar
2 cinnamon sticks
Finely grated zest of 1 orange
1/2 cup ketchup
1 tablespoon Dijon mustard
Kosher salt
1/4 teaspoon coarsely ground black pepper
12 quail, backbones and bottom leg joints removed, flattened, wings tucked
Canola oil, for brushing

Steps:

  • For the tabouli: Place the quinoa in a medium saucepan, cover with 1 3/4 cups cold water and season with salt and pepper. Bring to a boil, cover, lower the heat and cook until the water is absorbed and the quinoa is tender, 18 to 20 minutes. Remove the lid, fluff with a fork and let cool slightly.
  • Put the quinoa in a large bowl; add the tomatoes, mint, kale, cucumbers and onions and mix to combine. Whisk together the olive oil and lemon and orange zests and juices, and season with salt and pepper. Add the dressing to the salad and toss to combine. Cover and refrigerate for at least 1 hour before serving. The longer the salad sits the better the flavors become.
  • For the pomegranate-orange BBQ sauce: Heat the oil in a medium saucepan over medium heat; add the onions and cook until soft. Add the pomegranate juice, orange juice, pomegranate molasses, vinegar, sugar, cinnamon sticks and orange zest and cook until reduced by half. Add the ketchup and cook for 15 minutes.
  • Remove from the heat, whisk in the mustard, salt and pepper and let cool slightly. Remove the cinnamon sticks before using. Remove about 1 cup of the sauce for serving.
  • For the quail: Heat the grill to medium high for direct grilling. Brush the quail with canola oil and sprinkle with salt and pepper. Put breast-side down on the grill and cook about 3 minutes. Flip, brush with the barbecue sauce, cover the grill and cook another 3 to 4 minutes.
  • Transfer to a platter and serve with the reserved barbecue sauce and the tabouli.

3 cups water
1 tea bag mint tea
1 1/2 cups quinoa, rinsed
1/3 cup lemon juice
1/3 cup olive oil
1 tablespoon dried Italian seasoning
1/4 teaspoon fresh ground black pepper
1 teaspoon sea salt
1/2 teaspoon garlic powder
1/2 teaspoon lemon pepper
2 cups cucumbers, peeled, deseeded, and diced
2 cups tomatoes, deseeded, and diced
1 1/2 cups green peppers, destemmed, deseeded, and diced
3/4 cup green onion, thinly sliced
3/4 cup radish, quartered lengthwise, and thinly sliced
1/2 cup roasted sunflower seeds
1/3 cup black olives, sliced
1/3 cup freshly chopped parsley
1/4 cup freshly chopped mint

Steps:

  • In a medium saucepan, bring the water and tea bag to a boil. Add the quinoa, cover, reduce the heat to low, and simmer for 15 minutes. Drain off any of the remaining water from the quinoa and discard the tea bag. Transfer the cooked quinoa to a bowl and set aside to cool.
  • In a small bowl, whisk together the lemon juice, olive oil, Italian herb blend, salt, garlic powder, lemon pepper, and black pepper.
  • Pour the dressing over the cooled quinoa and toss gently to combine.
  • Add the remaining ingredients and toss gently to combine. Taste and adjust seasonings, as needed.
  • Cover and chill for 30-60 minutes to allow the flavors to blend.
  • Enjoy!

1 (2kg or 4 lb or 4 oz) butternut squash or 2 (1kg or 2 lb or 3 oz) butternut squash, halved
2 tablespoons extra virgin olive oil
1 tablespoon pure maple syrup
1 teaspoon chile flakes
Sea salt and cracked black pepper
1/4 cup (40g or 1 ½ oz) roasted almonds, chopped
For the quinoa tabouli:
2 cups (320g or 11 ¼ oz) cooked quinoa
½ cup (8g or ¼ oz) torn mint leaves
60g (2 oz) wild rocket (arugula) leaves
For the lemon tahini dressing:
½ cup (140g or 5 oz) hulled tahini
⅔ cup (160ml or 5 ½ fl oz) lemon juice
1 cup (250ml or 8 ½ fl oz) water
1 clove garlic, crushed
Sea salt flakes

Steps:

  • Preheat oven to 220°C (425°F).
  • Scoop the seeds from the squash and discard. Place squash, cut side up, onto a baking tray. Using the tip of a sharp knife, make some shallow slashes into the squash flesh. Combine the oil, maple, chile, salt and pepper and brush over the squash. Cover with aluminium foil and roast for 20 minutes. Remove the foil and roast for a further 40 minutes or until the squash is golden and soft.
  • To make the quinoa tabouli, in a large bowl combine the quinoa, mint, and arugula.
  • To make the lemon tahini dressing, in a small bowl, place the tahini, lemon juice, water, garlic and salt. Mix to combine.
  • To serve, place the squash onto a serving platter and top with the tabouli. Drizzle with the lemon tahini dressing and sprinkle over almonds.

6 large green onions (or more if they're small)
1 bunch cilantro
2 roasted jalapenos

6 oz. queso fresco
1 can black beans (maybe try these next time?)

Steps:

  • Maybe a little less olive oil. I used 1/3 C last time, and that was too much. Combine everything but the cheese. Let salad cool before adding cheese.

Tabouli is a fresh herb salad usually made with bulgur wheat. Here I make it with quinoa, a protein-rich seed that "pops" when you bite into it. Quinoa gives this side dish a lot of nutritional bang for your buck. You can also add a few pieces of leftover chicken or pork to turn tabouli into a meal. It also works well as a vegetarian main dish. Tabouli is hearty enough to stand up to rich meats, but the herbs and lemon juice give it a freshness that pairs well with fish and poultry, too. Whether you make it for dinner, a picnic, or a brown-bag lunch, this make-ahead-friendly recipe hits a lot of notes.

1/2 cup quinoa
1 1/2 cups water
Bunch of flat-leaf parsley, finely chopped
1/2 bunch of cilantro, finely chopped
2 tablespoons finely chopped fresh mint
2 ripe tomatoes, halved, seeded,and finely chopped
3 scallions (white and green parts), trimmed and finely chopped
Zest and juice of 1 lemon
3 tablespoons olive oil
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • Rinse the quinoa under cold water in a fine-mesh sieve. Turn it out into a large microwave-safe bowl and add the water. Cover and microwave on high for 9 minutes. Set aside for 2 minutes and then carefully uncover and fluff with a fork. The quinoa should have a tender snap when you bite it - if it doesn't, cover and microwave for up to 1 minute longer.
  • Stir the parsley, cilantro, mint, tomatoes, and scallions into the quinoa. Whisk the lemon zest and juice with the olive oil, salt, and pepper in a small bowl to make a vinaigrette and pour it over the quinoa. Cover the bowl with plastic wrap and set aside at room temperature for 1 hour for the flavors to combine before serving.

QUINOA ASPARAGUS SALAD (AKA SPRING TABOULI)

Spring Tabouli Salad with quinoa, asparagus, english peas, fresh dill and a lemony dressing. an easy, vegan, make-ahead salad for gatherings or lunch!

1 cup quinoa (dry)
1 1/2 cup water
Pinch salt
1 bunch asparagus, chopped into 1 inch pieces
2 cups shelled fresh English peas ( available at Trader Joes) or substitute shelled edamame, radishes, cucumber, snow peas or even spring greens.
3 scallions - thinly sliced at a diagonal
½ cup fresh dill ( 2 x .5 ounces packages) chopped ( or sub Italian parsley)
½ cup Italian parsley, more to taste.
1/4 cup sliced or slivered almonds, toasted ( optional, or sub other nut or seed)
1/3 cup olive oil
zest from 1 lemon
1/3 cup fresh lemon juice ( 1-2 lemons)
1/2-1 teaspoon kosher salt
pepper to taste

Steps:

  • Rinse the quinoa and place it in a pot with the water and pinch of salt. Bring to a boil, cover, lower heat, and allow it to simmer on low heat for 12-15 minutes. Turn off heat, and let sit covered for 5 -10 minutes, then uncover, fluff with a fork and let it cool.
  • While the quinoa is cooking, blanch the peas and asparagus in salted boiling water for just a few minutes, until bright and tender. Rinse under cold water.
  • Place the cooled quinoa and blanched veggies in a bowl. Add the scallions, dill and almonds and give a toss. Add the oil, lemon zest and lemon juice and salt, pepper and stir again.
  • Taste, adjust salt and lemon, adding more if you like. If you are making this ahead, be sure to taste before serving as flavors will mellow - so I'll usually add a little more salt and lemon.
  • Serve with optional avocado, feta, goat cheese, sunflower sprouts.

BEET AND QUINOA TABOULI

Sea salt and pepper
Juice of 1 lemon or lime
6 Tbs. olive oil
2 Tbs. chopped flat-leaf parsley
1 Tbs. chopped cilantro
1 Tbs. chopped chives
1 Tbs. chopped mint
For the tabouli:
2 Tbs. pine nuts
1 cup (7 oz) uncooked white quinoa
2 cups water or homemade vegetable broth
Sea salt
1 large cooked beet, peeled and diced
1 cup mixed cherry tomatoes, cut in half
1/4 red onion, finely chopped
3 oz. feta cheese, crumbled
Tip: To cook the beet, add it (unpeeled) to a pot of water, bring to a boil, and cook until it's easy to insert a knife in the middle. Once cooked through, let cool before peeling the beet.

Steps:

  • Make the vinaigrette: In a small bowl, combine the sea salt and pepper with the lemon juice and oil, and whisk to emulsify. Stir in the herbs. Dress the salad with this vinaigrette and adjust the seasoning to your taste. Add more dressing if you like and serve with the pine nuts. Make the tabouli: Toast the pine nuts in a frying pan over medium heat for 2 minutes, or until lightly colored and fragrant; remove from the heat and set aside to cool. Rinse the quinoa under cold water and drain it in a colander. Add it to a pot and cover with the water or broth and a pinch of sea salt. Bring to a boil, then turn down the heat, cover, and simmer for 12 to 14 minutes, or until all of the water or broth is absorbed. Remove from the heat and keep covered for 5 more minutes. Transfer the quinoa to a bowl and fluff it with a fork; let cool. Add the beet and toss gently. The quinoa will take on a nice pink color. Add the tomatoes, onion, and cheese.

1/2 cup fresh lemon juice
1 cup quinoa
1/3 cup olive oil
3 medium ripe tomatoes
2 tablespoons of fresh mint
1 1/2 cups parsley, coarsely chopped
1 cup scallion, chopped
salt, to taste

Steps:

  • Place quinoa in a colander and rinse several times rubbing the grains together to remove the bitter outer layer.
  • Place water and quinoa into a 2-quart saucepan. Bring to a boil. Reduce heat to a simmer and cover. Cook for 10 to 15 minutes or until all water has been absorbed.
  • While the quinoa is cooking, finely chop the tomatoes, parsley, and scallions. Add lemon juice, olive oil and fresh mint to the tomato mixture.
