Steps:
- In a large bowl combine quinoa, ham, apple, celery and celery leaves.
- In a small bowl, whisk together oil, vinegar, mustard and honey. Add to quinoa and gently toss to coat.
- Season to taste with salt and pepper. Cover and refrigerate at least 30 minutes. Serve topped with pecans.

PEPPER AND QUINOA SALAD
Put a salad of quinoa, red bell peppers and toasted pecans on the table for an easy, hearty meal.

Steps:
- Bring a large pot of salted water to a boil.
- Cook the quinoa in the boiling water until the grains are tender and begin to open, about 20 minutes; drain and put in a large bowl.
- Mash the garlic with a pinch of kosher salt and add to the bowl with the quinoa. Add the peppers, parsley, pecans, oil, vinegar, cinnamon and a couple grinds of black pepper. Toss to combine.
QUINOA WITH HAM AND CRANBERRIES
Quinoa...where have you been all my life? This grain is a new discovery for me, and a wonderful one at that. I like to have foods high in protein, and this one is packed. This recipe can be used as a side, or as a meal. Very tasty. One of the best things about this wholesome concoction is that it is equally as good cold as it is warm. The ham can be substituted with chicken or shrimp for a change of taste. See recipe #16399 for toasting instructions.

Steps:
- In a small saucepan, bring broth and ham to boil.
- Add quinoa. Reduce heat and cover. Cook for 15 minutes or until all liquid has been absorbed.
- In a frying pan, melt butter.
- Add onion, zucchini, red pepper, salt, pepper and cayenne. Sauté until vegetables are tender/crisp.
- Stir in the cooked quinoa and cranberries. Heat through.
- Enjoy!
