Need a quick meal that looks as great as it tastes? This pizza tastes like pizzeria quality and at a fraction of the cost. Feel free to make it your own by adding mushrooms, green peppers, olives or yellow pepper rings!

1 prepared pizza crust
2 c italian cheese blend or fresh mozzarella
2 clove garlic, finely chopped
1/2 red onion, sliced into rings
1 c left over chicken, cubed
ranch salad dressing
fresh spinach cut into ribbons
1 seeded roma tomato, diced or sliced thinly
freshly grated black pepper
drizzle olive oil

Steps:

  • 1. Place pizza crust onto pizza pan. Cover crust with ranch dressing using approximately the amount that you would normally use of tomato sauce.
  • 2. Sprinkle chopped garlic over dressing, then chicken, cheese, red onion and tomatoes. Season with freshly ground black pepper. Drizzle with a small amount of olive oil.
  • 3. Bake as per crust instructions. About one minute before pizza is done, add spinach ribbons and return to oven for 1 minute longer just to wilt.

1 package thin crust prepared prepared pizza crust or 1 package prepared focaccia bread
extra virgin olive oil, for drizzling
3 large garlic cloves, minced
1 cup shredded mozzarella cheese
1 cup shredded provolone cheese
1/4 cup grated parmigiano-reggiano cheese (a handful) or 1/4 cup romano cheese (a handful)
1/4 cup chopped parsley

Steps:

  • Preheat oven to 500 degrees F.
  • Put the pizza shell or focaccia onto a pizza pan or cookie sheet. Drizzle shell with oil and scatter minced garlic over shell to edges. Cover the pie with a layer of all 3 cheeses combined and work all the way to the edge of the shells. Cook 6 to 8 minutes, until cheeses have melted and begin to bubble. Remove from oven and garnish with parsley. Cut pie with pizza wheel or knife into bite-size squares and serve.
