QUICK CHICKEN TORTELLINI SOUP



Quick Chicken Tortellini Soup image

1 tablespoon olive oil
2 chicken wings
3 bone-in, skin-on chicken breasts (about 2 1/2 pounds)
3 carrots, diced
3 stalks celery, diced
2 shallots, minced
Couple splashes dry sherry
24 cups (6 quarts) good-quality, low-sodium chicken stock
4 sprigs fresh thyme, chopped
1 bay leaf
Kosher salt and freshly ground black pepper
1 lemon, zested and juiced, plus lemon wedges, for garnish
2 cups cheese tortellini
Chopped fresh parsley, for garnish

Steps:

  • Heat a heavy-bottomed Dutch oven or soup pot to medium heat and add the oil. Put the chicken wings and breasts in skin-side down and cook without moving until golden brown, 6 to 8 minutes. Set aside the chicken.
  • Add the carrots, celery and shallots. Saute until the shallots are translucent, about 10 minutes, stirring all the while. Deglaze with the dry sherry and scrape up any bits off the bottom. Add the stock, fresh thyme and bay leaf, return the chicken to the pot and bring to a low simmer; simmer until the chicken is cooked through, about 20 minutes. Set aside the chicken to cool on a plate.
  • Meanwhile, bring a large pot of salted water to a boil.
  • Shred the chicken breasts and whatever can be salvaged from the wings and pour any reserved juices back into the soup pot. Add in the chicken and adjust the seasoning if necessary. Just before serving, add in the lemon zest and juice to taste.
  • Cook the tortellini in the salted water just until al dente.
  • Put some tortellini in each individual bowl, then ladle the soup over. Serve immediately to retain the al dente quality of the tortellini. Garnish with a wedge of lemon and fresh parsley.

2 tablespoons butter
¼ cup chopped onion
2 cloves garlic, minced
6 cups chicken broth
1 (16 ounce) jar Alfredo sauce
1 (8 ounce) carton sour cream
2 cups cubed cooked chicken
1 (20 ounce) package refrigerated three-cheese tortellini
1 (10 ounce) package fresh spinach
salt and ground black pepper to taste
¼ cup shredded Parmesan cheese

Steps:

  • Melt butter in a 5-quart pot over medium heat; cook and stir onion and garlic in melted butter until onion is translucent, about 5 minutes. Stir chicken broth and Alfredo sauce into onion mixture; cook until heated through, about 5 minutes. Stir in sour cream and cooked chicken; simmer for 15 minutes.
  • Mix cheese tortellini and spinach into chicken mixture, cover pot, and simmer for 20 minutes. Season with salt and pepper.
  • Divide soup into bowls and sprinkle with Parmesan cheese.

There are other tortellini soup recipes similar to this one, but try mine if you are looking for more vegetables and less pasta. This is quick and easy to make, and can easily be made on a busy weeknight. I think the red wine adds a lot to the flavor so that is one ingredient I would not skip.

2 (14 1/2 ounce) cans vegetable broth
1 (14 1/2 ounce) can diced tomatoes (do not drain)
4 cloves garlic, minced
4 ounces cheese-filled egg tortellini, dry
1 (10 ounce) package frozen spinach, chopped (no need to thaw or drain)
1 onion, chopped
1/4 cup red wine
2 teaspoons dried oregano
2 teaspoons dried basil
2 tablespoons parmesan cheese, grated
fresh ground black pepper, to taste

Steps:

  • In a large pot, combine all ingredients except the tortellini and parmesan cheese.
  • Bring to a boil.
  • Reduce heat and simmer, covered, for about 20 minutes.
  • While the tomato and spinach mixture simmers, prepare tortellini according to the package.
  • Do not overcook- I prefer to undercook the pasta by a minute or two so it stays firm.
  • Drain.
  • Add tortellini to the tomato and spinach mixture and simmer for another 5 minutes.
  • Serve the soup in bowls, topped with the parmesan cheese.

1 pkg vegetable soup mix (knorr)
1 - 10 oz pkg frozen chopped spinach - thawed & sqeezed. ( i used 2 cups fresh and cut it up)
1 - 9 oz pkg. refrigerated beef or cheese tortellini pasta (i used the multi-colored pasta cheese filled this time in the picture).
-- parmesan cheese - freshly grated
-- black pepper
