SUPER SIMPLE SPINACH SALAD



Super simple spinach salad image

A simple but divine spinach salad with homemade balsamic vinaigrette!

5-6 cups fresh baby spinach
1/2 clove minced garlic
1 overflowing tablespoon balsamic vinegar
1 1/2 tablespoons extra-virgin olive oil
pinch of sea salt and freshly cracked black pepper

Steps:

  • Put your spinach into a big bowl. If you're using any add-ins, go ahead and add them now. (See notes for ideas.)
  • Mix all of the dressing ingredients together in a small jar or container with a tight-fitting lid. Shake them up until it's well mixed.
  • Pour the dressing over the spinach right before you're ready to serve.
  • Enjoy!

Quick Spinach and Fruit Salad image

Often spinach salad is often adorned with one type of fruit or berries, this one takes into account a summer fruit explosion. You can make your own poppyseed dressing or use a commercially prepared variety.

2 c fresh spinach
1 small apple, cored and sliced
1 small pear, cored and sliced
1/2 c strawberries, sliced
1/4 c blueberries, rinsed
2-3 Tbsp poppyseed dressing
1 tsp apple cider vinegar
2 Tbsp pecans, finely chopped
2 Tbsp feta cheese

Steps:

  • 1. Wash and dry spinach. Divide evenly into two salad bowls.
  • 2. Arrange sliced apples, pears, strawberries and blueberries on top of spinach.
  • 3. in a small bowl, mix commercial poppyseed dressing with apple cider vinegar. Drizzle some over each serving .
  • 4. Sprinkle feta and chopped pecans on top to serve.
