1 pound lean ground turkey
1 large red onion, chopped
1 large green pepper, chopped
1 can (8 ounces) tomato sauce
1/2 cup barbecue sauce
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon chili powder
1/4 teaspoon salt
8 hamburger buns, split

Steps:

  • In a large skillet, cook turkey, onion and pepper over medium heat 6-8 minutes or until turkey is no longer pink and vegetables are tender, breaking up turkey into crumbles., Stir in tomato sauce, barbecue sauce and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, 10 minutes to allow flavors to blend, stirring occasionally. Serve on buns.

Ground pork and beef are mixed with new ingredients like pears, sesame oil and gochujang to create this quick, easy, Korean-inspired take on the old favorite sloppy joe. The Quick Korean Pickles add a sweet crunch that rounds out the sandwich.

1 seedless English cucumber or 4 small Persian or Kirby cucumbers
About 1/4 cup rice wine vinegar
2 tablespoons superfine sugar
1 tablespoon gochugaru Korean chili flakes or chili paste
1 1/2 teaspoons salt
1 teaspoon toasted sesame oil
1 teaspoon toasted sesame seeds
1 Asian pear or Bosc pear
1 onion, red or yellow
4 cloves garlic
1 inch ginger root
Neutral oil, such as peanut or safflower
1 pound ground beef
1/2 pound ground pork
Salt and pepper
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce, Lea and Perrins preferred brand
1/3 cup gochujang Korean paste, Mother in Law's preferred brand
1 cup beef or chicken stock
1 tablespoon light brown sugar
1 tablespoon toasted sesame oil
4 to 6 soft large hamburger rolls, Big Marty's preferred brand
4 scallions, whites and greens, chopped
2 green chilies, fresh finger or jalapeno, or pickled jalapeno peppers

Steps:

  • Gather your ingredients.
  • For the pickles: Thinly slice the cucumber 1/4 to 1/8-inch thick. In a bowl, whisk up rice wine vinegar, sugar, chili flakes, salt and sesame oil. Add sliced cucumbers and toss.
  • For sloppy joes: Peel and grate the pear on a wide tooth of box grater. Peel and chop the onion and slice or grate the garlic and ginger.
  • Heat a skillet over medium-high to high heat. Add the oil, 2 turns of the pan, then add the meats and brown and crumble. Season with salt and pepper. Add pear, onions, garlic and ginger and stir a couple of minutes to soften. Add soy sauce, Worcestershire, chili paste, stock, sugar and sesame oil. Bring to a bubble and reduce heat to simmer, 10 to 15 minutes.
  • Serve beef on rolls with scallions and fresh or pickled chili peppers and quick pickles.

This is a kiddo and grandkid-friendly recipe you can whip up for an in-a-pinch meal... or add it to your regular menu rotation and get those veggies in without a struggle!

1 cup lentils
2 onions, diced
1 pound lean ground beef
1 large green bell pepper, diced
¾ cup ketchup
¾ cup barbeque sauce
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic

Steps:

  • Place lentils in a small pot and cover with 2 cups hot water. Bring to a boil; reduce heat and simmer until lentils are tender, about 15 minutes. Drain.
  • Heat a large nonstick skillet over medium heat. Add onions; cook and stir until softened, 3 to 5 minutes. Add ground beef and green bell pepper; cook and stir until browned, about 8 minutes.
  • Stir drained lentils, ketchup, barbeque sauce, Worcestershire sauce, and minced garlic into the skillet. Reduce heat to low and simmer until flavors combine and mixture thickens to desired consistency, 15 to 20 minutes.

Had a craving for them...so I whipped up this recipe by combining several things from the top recipes I could find. There's no need to follow the directions exactly, I'm just giving you the details of what I had on hand. Also, this meal is pretty lean, considering the choice of meat and the fact that it is well drained after browning. This meal can be served as is on a bun or over a hot dog and sprinkled with shredded cheese.

1/2 lb ground chuck (83/17 Fat Ratio...great for flavor)
1/4 teaspoon salt
fresh ground black pepper
1 teaspoon garlic, minced
1 small onion, chopped
6 tablespoons ketchup
1 tablespoon barbecue sauce (I used Jack Daniel's)
1 tablespoon light brown sugar
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
1 tablespoon red wine vinegar (optional, if you like it tangy) (optional)

Steps:

  • Brown meat in a skillet until it has just cooked through. Add in salt and pepper.
  • Drain meat onto paper towels so that the grease and fat have been soaked up.
  • Using the same skillet (after it has been wiped down with the a paper towel), combine all the remaining ingredients and bring to a slight simmer.
  • Add the meat back along with some fresh cracked black pepper. (You can also add the meat after 3-4 minutes of slight simmering if you prefer very soft onions.).
  • Heat thoroughly and serve on a steamed or toasted bun with kettle chips.
  • These are also great topped with cheese and a hot dog.

  • In large skillet, brown meat and drain. Stir in tomato sauce, bulgur and seasonings. Simmer uncovered for about 10 minutes, or until desired consistency, stirring frequently. Arrange lettuce and cheese on bun. Add meat mixture. Serve with raw veggies and fresh fruit.

1 tablespoon Worcestershire sauce
1 tablespoon prepared mustard
1 tablespoon brown sugar
1 medium onion (optional)
3 tablespoons ketchup
1 (10 1/2 ounce) can tomato soup

Steps:

  • Brown hamburger and onion in a 10 inch skillet; drain well.
  • Add Worcestershire, mustard, brown sugar, ketchup, and tomato soup to hamburger.
  • Simmer at least 30 minutes.
  • Serve on hamburger buns.
