15 mini phyllo tart shells
½ cup shredded Swiss cheese
⅓ cup crumbled cooked bacon
1 egg
½ cup half-and-half
¼ teaspoon dried basil
¼ teaspoon dried parsley
¼ teaspoon garlic powder
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange phyllo tart shells on a baking sheet. Fill each shell with about 1 teaspoon Swiss cheese and 1/2 teaspoon bacon.
  • Lightly beat egg, half-and-half, basil, parsley, garlic powder, salt, and black pepper together in a bowl. Pour about 1 teaspoon egg mixture into each phyllo shell.
  • Bake in the preheated oven until egg is set in the middle and lightly browned, 12 to 15 minutes.

8 eggs
16 Ritz crackers, crushed
1 (7 ounce) can mushrooms, drained and chopped
1 cup cooked chicken or 1 cup ham, chopped fine
1 onion, chopped
1 green pepper, chopped
8 ounces cheddar cheese, shredded
salt and pepper

Steps:

  • Saute onion, green pepper in a skillet sprayed with cooking spray until tender. Set aside to cool.
  • Shred cheese.
  • Beat eggs. Add cracker crumbs, cheese, mushrooms, meat, sauteed vegetables, salt and pepper.
  • Spray mini muffins tins very well with cooking spray. Fill tins to top.
  • Bake at 350'F for 25 minutes.
