EASY PICKLED MUSHROOMS



Easy Pickled Mushrooms image

This is a recipe I have made for years and it is as popular now as it was the first time I made it. Using canned mushrooms allows it to be made ahead and kept in the fridge.

1 onion, thinly sliced
⅓ cup red wine vinegar
⅓ cup vegetable oil
1 tablespoon brown sugar
1 teaspoon Dijon mustard
2 (12 ounce) cans whole mushrooms, drained

Steps:

  • Bring onion, vinegar, oil, sugar, and Dijon mustard to a boil in a saucepan. Add mushrooms and simmer until liquid is slightly reduced, 5 to 6 minutes. Transfer mixture to a covered container and chill. Drain before serving.

These sweet and very tangy neon pickles pair best with grilled meats, stews, and braises.

1 1/2 cups white wine vinegar
1 tablespoon sugar
2 teaspoons coriander seeds
2 teaspoons dried tarragon
2 teaspoons kosher salt
1 teaspoon dried mint
8 ounces pearl onions, peeled, halved
1/2 small beet, peeled, halved

Steps:

  • Bring vinegar, sugar, coriander seeds, tarragon, salt, and mint to a boil in a small saucepan, stirring to dissolve sugar and salt. Reduce heat to a simmer and add onions and beet. Cook, stirring occasionally, until onions soften slightly, about 3 minutes. Pluck out and discard beet (the onions will continue to take on color as they sit). Transfer onions and brine to a 1-qt. jar or a nonreactive container and let cool. Cover and chill at least 2 hours before serving. The flavor will mellow as it sits.

This recipe is so easy to make and so very delicious. Make it ahead of time. Double or even triple it. Great as a side dish or an appetizer.

1/3 c red wine vinegar
1/3 c vegetable oil
1 medium onion, sliced thin and rings separated
1 tsp salt
2 tsp parsley flakes
1 tsp prepared mustard
2 Tbsp brown sugar
2 jar(s) mushroom caps (6 oz each), drained

Steps:

  • 1. In a sauce pan, combine all ingredients except the mushrooms. Bring to a boil.
  • 2. Add mushrooms, reduce to a simmer. Simmer 5-6 minutes.
  • 3. Pour into a bowl, let cool 30 minutes or so, then cover and chill overnight.
  • 4. Serve chilled or at room temp.
