This miso soup is a spin on the classic with shiitake, tofu, and scallions.

Steps:
- Heat oil in a medium saucepan over medium-high heat. Add mushrooms, chives, and garlic slices; cook for 1 minute. Add tofu and cook for 2 minutes. Pour in beef broth and chicken broth, then stir in miso paste until dissolved.
- Bring to a boil. Reduce heat to a simmer and cook for 10 minutes. Ladle into bowls to serve.

Steps:
- Heat olive oil in a saucepan over medium heat. Add onion, celery, and spinach. Cook and stir until just softened, about 3 minutes. Pour in water; add tofu and salt. Reduce heat to medium-low; simmer until heated through, about 8 minutes.
- Stir in miso; simmer until dissolved, about 5 minutes. Season with ground black pepper and chili powder.

EASY QUICK MISO SOUP

Steps:
- 1. Place the Wakame in a small bowl and cover it with hot water and set aside.
- 2. Add the water to a stock pot. Bring to a boil whisking in the instant Dashi. Turn heat to medium and add the tofu. Cook 1 minutes. Scoop out about 1/2 cup of the soup and mix it with the miso paste until it is smooth.
- 3. Add the Miso mixture to the soup. Cook 1 minute. Drain the Wakame and add to the soup. Cook 2 minutes.
- 4. Ladle into bowls and add the scallions.
QUICK MISO SOUP
Steps:
- Preparation Combine all ingredients in a travel mug. To serve, pour 8 oz. boiling water into the cup and stir until miso is well blended. Let sit 2 minutes before eating.
