This is from Light & Tasty. I haven't tried it but it sounds interesting. It's made in the microwave. The original recipe states "1 envelope seasoned coating mix" so I guessed 8 ounces for the amount. I suppose you could use anything from a pre-packaged mix to cornflakes. I hope it's as good as it sounds!

4 (6 ounce) boneless skinless chicken breast halves
4 slices thin deli ham
2 slices swiss cheese, halved
1/4 cup butter, melted
8 ounces seasoned coating mix

Steps:

  • Flatten each breast to 1/4" thickness.
  • Put ham and cheese down the middle of each breast and roll up; secure with toothpicks.
  • Place melted butter in shallow bowl and coating mix in another shallow bowl.
  • Dip chicken in butter and then coating mix.
  • Place each breast in a 2-qt. microwave-safe dish coated with cooking spray.
  • Cover loosely and microwave on high for 5-7 minutes.
  • Turn each breast over and cook for another 5-6 minutes or until juices run clear.
  • Let stand for 5 minutes.
  • Discard toothpicks before serving.

Originally in the Good Housekeeping magazine. I made some adjustments to lower the sodium and calories a bit. Good recipe for a brunch, buffet, or family dinner.

1 lb baby red potato, cut into 1 inch pieces
1 lb chicken tenders
1 (12 ounce) bag broccoli florets, approx 3 3/4 cups
1 (10 3/4 ounce) can low-sodium condensed cream of chicken soup
8 ounces ham, cooked and cut 1/2 inch cubes, can use deli ham as a substitute
3/4 cup swiss cheese, shredded
1/2 cup skim milk
2 teaspoons dried parsley
1 garlic clove, finely chopped

Steps:

  • Preheat oven to 350 degrees.
  • In large microwave safe bowl, place potatoes and 2 tablespooons of water. Cover the bowl, and microwave on high for 3 to 4 minutes or until potatoes are fork tender, stirring once.
  • Add chicken and all remaining ingredients to potatoes. Toss well.
  • Transfer mixture to 9x13 baking dish.
  • Bake uncovered for 50-55 minutes or until chicken no longer shows pink and cheese is bubbly.
  • NOTE: Spray casserole dish with cooking spray or foil line the casserole dish for easier clean up.____This can be assembled the night before and then cooked right before serving.

  • Flatten chicken to 1/4-in. thickness.
  • Place ham and cheese down the center of each; roll up and secure with a toothpick.
  • Place butter and coating mix in separate shallow bowls.
  • Dip chicken in butter, then roll in coating mix.
  • Place in a greased 2-qt. microwave-safe dish. Cover loosely and microwave on high for 5-7 minutes.
  • Turn chicken over; cook 5-6 minutes longer or until juices run clear.
  • Let stand for 5 minutes. Discard toothpicks.
