QUICK AND EASY MEXICAN PIZZA
Fried tortillas topped with salsa and cheese are baked for 8 minutes at 350 degrees. Cheddar, Jack, or pizza mixture all work fine. Cool the oil and save it in a jar in the fridge for the next time.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat vegetable oil in a large skillet over medium-high heat until hot; fry tortillas, one at a time, until golden brown, 2 to 3 minutes per side. Transfer fried tortillas using tongs to a baking sheet.
- Spread salsa onto each fried tortilla; top with Cheddar cheese and Parmesan cheese.
- Bake in the preheated oven until cheese is melted, about 8 minutes.

Steps:
- 1. In a skillet cook beef with oniion powder till no longer pink. Drain and set aside.
- 2. Fry tortillas on each side in hot oil till golden brown * you might have to poke holes in them while cooking to pop bubbles. drain on paper towels.
- 3. Spread salsa on tortillas followed by beef and cheese. heat in microwave till cheese melts. top with dolup of sour cream lettuce and diced tomatoes. (I serve with my homemade refried beans)

- 1. Preheat oven to 400 degrees F.
- 2. Cook meat; drain.
- 3. Stir in seasonings.
- 4. Spread 1/4 cup salsa and 1/2 meat mixture on each tortilla.
- 5. Top each with 1/2 cup cheese and optional toppings.
- 6. Bake in preheated oven at 400 degrees F oven for 8 to 10 or until crisp and lightly browned.
QUICK MEXICAN PIZZA

- Heat the oven to 450 for 10 minutes, then reduce heat to 425 Lightly brush edges of crust with olive oil Drain some of the liquid from the salsa and spread over the crust Top with grilled chicken strips Top all with shredded cheese Bake 10 - 12 minutes until the pizza is heated through let it rest a few minutes, slice and service with sour cream on the side ENJOY!

This is a delicious lunch that I whipped up for my daughter and myself the other weekend. It's quick and easy. You could also cut each pizza into smaller pieces to serve as an appetizer at a party.

- 1. Drain and rinse can of black beans. Deseed and devein the jalapeno and finely chop. Combine beans, jalapeno, onions, and lime juice in a small bowl.
- 2. Spread 1 1/2 tablespoons of salsa on each tortilla. Top 1/4 of the bean mixture and 1/4 cup cheese. Repeat with each tortilla.
- 3. Bake on a pizza stone for about 10 minutes at 350F. You'll know your pizzas are ready when the cheese is melted and the bottom is on the crispy side (not soggy).
- 4. Top your finished pizza with dollops of sour cream, avocado, and black olives, or any other taco toppings you like. Enjoy!
