4 boneless skinless chicken breasts (1lb.)
2 cups sliced fresh mushrooms
3 cloves garlic, minced
1 teaspoon dried basil
1/2 teaspoon italian seasoning
1 (28 ounce) jar spaghetti sauce
1/2 cup red wine or 1/2 cup chicken broth
hot cooked angel hair pasta or spaghetti

Steps:

  • In a non-stick skillet coated with cooking spray cook chicken for approx.
  • 4-5 minutes on each side.
  • Don't over cook there is additional heating time at the end.
  • Remove from pan and keep warm.
  • Add mushrooms, garlic, basil, and Italian seasoning.
  • Saute until mushrooms are tender.
  • Stir in spaghetti sauce and red wine.
  • Add chicken, cover and simmer 10 minutes or until heated through.
  • Serve over pasta.

1 pound spaghetti
One 32-ounce can whole peeled plum tomatoes
3 garlic cloves
1/4 cup extra-virgin olive oil
Grated Parmesan, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions and then drain.
  • While the pasta is cooking, puree the tomatoes with their juice in a blender with the garlic cloves, 1 teaspoon salt, and a few grinds of pepper.
  • Heat the oil in a large heavy skillet over medium-high heat. Careful of it splashing, pour the tomato puree into the hot oil and cook, stirring occasionally, until slightly thickened, about 5 minutes. Add the cooked pasta to the sauce and toss until coated. Season with salt and pepper. Serve with grated Parmesan.

1 (15 ounce) can diced tomatoes, drained and divided
1 pound ground turkey
½ cup shredded Parmesan cheese
½ cup panko bread crumbs
½ cup sliced fresh basil leaves
1 large egg, lightly beaten
1 pinch salt and ground black pepper to taste
1 tablespoon olive oil
1 teaspoon Italian seasoning

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Add 1/2 cup diced tomatoes to a large mixing bowl and mash with a fork until broken up. Add turkey, Parmesan cheese, bread crumbs, basil, egg, salt, and pepper. Gently mix until combined, then form into 4 patties.
  • Cook burgers on the preheated grill until cooked through, about 5 minutes per side.

1 cup water
1 (14 1/2 ounce) can diced tomatoes
1/2 tablespoon onion flakes
1 teaspoon minced garlic
1 teaspoon basil
1/2 teaspoon rosemary
1/4 teaspoon oregano
1 teaspoon sugar
salt
ground black pepper

Steps:

  • Combine ingredients in a medium mixing bowl and mix well.
  • Use in any recipe calling for spaghetti type sauce. If not using immediately the sauce can be heated to cook in the flavors of seasonings. Heat in a sauce pan medium-low allow just to bubble. Cool and store.

2 tablespoons extra-virgin olive oil
1/2 medium onion, diced
3 cloves garlic, chopped
3 1/2 cups whole, peeled, canned tomatoes in puree (about 1 (28-ounce) can), chopped or crushed by hand
Fresh thyme sprig
Fresh basil sprig
3 plum tomatoes, chopped (optional)
2 teaspoons kosher salt
Freshly ground black pepper

Steps:

  • Heat the oil in a medium saucepan over medium-high heat. Add the onion and garlic, and cook stirring, until lightly browned, about 3 minutes. Add the tomatoes, their juice, and bring to a boil. Adjust the heat to maintain a simmer, and cook covered, for 10 minutes. Add the herbs and chopped fresh tomatoes, if using, and simmer for a few more minutes until fresh tomatoes are cooked through.
  • Remove and discard the herb sprigs. Stir in the salt and season with pepper, to taste. Use now, store covered in the refrigerator for up to 3 days, or freeze for up to 2 months.
  • Cook's note: For more texture add seeded chopped tomatoes at the end. Also add fresh chopped herbs for a fuller herb flavor.
  • Serving Suggestions: Serve this sauce over a pound dry pasta; linguini, fettuccine, spaghetti or fusilli, or, polenta, egg dishes, shellfish, or use for stews or braises. This sauce, when cooked a little longer and slightly thicker (around 2 cups), is also ideal for spreading on pizza.

1 medium onion, Diced into coin-sized pieces
1 (28 ounce) can san marzano tomatoes (Crushed)
2 (16 ounce) cans san marzano tomatoes (Diced)
3 tablespoons garlic (Minced, I add more sometimes XD)
3 tablespoons pesto sauce (coarse chopped is best, not the kind that looks like a paste.)
8 ounces fresh mushrooms, Sliced
1/4 cup olive oil
1/4 teaspoon red pepper flakes (optional)
1/4 cup vodka (optional, but recommended)
1 lb pasta (cooked)
parmesan cheese

Steps:

  • In a large pot, cook crumbled Italtian Sausage over med heat.
  • Once almost done, add Onions and cook for 5 minutes or until translucent then add Vodka.
  • Add Garlic, Tomatoes, Mushrooms, Red Pepper Flakes and Pesto and simmer for about 10 minutes. Add a splash of Olive Oil and serve over your favorite Pasta with Parmasean Cheese.

1 can (14-1/2 ounces) Italian diced tomatoes, undrained

  • Over medium heat, heat oil in a large pot until hot. Add onion and garlic, sauté for 3 to 5 minutes until the onions begin to appear translucent. Add the tomatoes, stir to mingle the flavors.
