1 (3 ounce) package lemon-flavored gelatin
1 cup hot water
ΒΌ pound butter
8 tablespoons white sugar
2 (14.4 ounce) packages graham crackers, crushed into fine crumbs
2 lemons, zested
2 (8 ounce) packages cream cheese, softened

Steps:

  • Pour gelatin mix into a bowl and add 1 cup hot water. Stir until dissolved. Set aside and do not chill.
  • Melt butter in a heat-resistant measuring cup in a microwave, about 30 seconds. Transfer melted butter to a bowl. Add sugar and mix well. Pour in graham cracker crumbs and mix well. Place crumb mixture into the bottom of an 8-inch pie pan and shape into a crust.
  • Stir lemon zest into warm gelatin mixture. Add cream cheese and mix until any lumps are gone. Pour filling into the prepared crust. Chill in the refrigerator for at least 2 hours.

1 tub (24.2 oz.) PHILADELPHIA Ready-To-Eat Cheesecake Filling
1 container (6 oz.) lemon low-fat yogurt
1 ready-to-use graham cracker crumb crust (6 oz.)
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Place cheesecake filling in large bowl. Add yogurt; stir just until blended.
  • Spoon into crust. Smooth top lightly with back of spoon to form even layer; top with whipped topping. Garnish with lemon slices and mint sprigs, if desired.
  • Serve immediately. Or cover and refrigerate until ready to serve. Store leftovers in refrigerator.

1/4 cup sugar
6 tablespoons melted butter

1 (8-ounce) package cream cheese, softened
2 cups milk, divided
1 tablespoon sugar
1/2 teaspoon vanilla extract
1 (3 3/4-ounce) package instant lemon pudding mix

Steps:

  • Crust: Combine crumbs, sugar, and butter. Press firmly on bottom and sides of an 8-inch square pan or 9-inch round pie pan. Chill while preparing filling. Filling: Beat cream cheese until soft. Blend in 1/2 cup milk. Add remaining milk, sugar, vanilla, and pudding mix; mix well. Pour into crust. Chill until firm. Garnish with whipped cream and strawberries or cherries.
