SALAD BAR SALAD WITH CREAMY ITALIAN DRESSING

Steps:
- For the dressing: Mince the garlic with a knife and then sprinkle about 1/8 to 1/4 teaspoon of salt on it and mash it into a paste with a fork. Chop the parsley, chives and basil very finely and add to the garlic.
- In a bowl, combine the garlic mixture, mayonnaise, sour cream, Parmesan, cayenne, paprika and Worcestershire, tasting frequently and adjusting the seasonings as needed. Chill for a couple of hours before serving. Thin with a little milk before using if desired.
- For the salad: To assemble, layer chunks of the iceberg lettuce on a platter. In lines, lay on the grated cheese, shredded carrots and cucumber slices, and sprinkle the sunflower seeds over the top. Drizzle on the dressing and serve.
QUICK ITALIAN SALAD

- For the dressing: In a blender, add the olive oil, mayonnaise, Parmesan, parsley, sugar, vinegar, black pepper, salt, red pepper flakes, garlic and lemon juice and blend until pureed.
- For the salad: Put the romaine and iceberg greens in a large bowl and toss with the dressing. Top the salad with the pepperoncini, olives, tomatoes and onions. Sprinkle with Parmesan at the end.
AUNT TRISH'S SALAD DRESSING (FROM THE PIONEER WOMAN)
This comes from the Pioneer Woman on the foodnetwork. It's her Aunts recipe for salad dressing. She says Aunt Trish always used salad oil but you can use canola oil. And you can also use the Parmesan cheese that comes in a can if you wish.

ITALIAN SALAD WITH PARMESAN CRISPS

- For the Parmesan crisps: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Place 6 tablespoon-size mounds of cheese on the parchment a few inches from one another; they will spread as they begin to melt. Bake until the cheese has completely melted, about 5 minutes. Carefully transfer the crisps to a baking rack to cool completely before assembling the salad.
- For the green olive dressing: Combine the olive oil, olives, lemon zest and juice, mustard, salt and pepper in a mason jar, twist the lid on tight and shake until emulsified.
- For the salad: On a large platter, layer the radicchio leaves with the arugula. Tuck in the citrus pieces. Give the dressing one more good shake and drizzle it over the salad. Garnish with the Parmesan crisps and serve.
QUICK ITALIAN PASTA SALAD
I came up with this recipe after making the boxed kind for many years and I would doctor it up with fresh veggies, so I thought why not just make my own! It's super quick and easy and you can add as much or as many veggies that you like or use your own favorite dressing.

- Cook pasta according to package directions, about 8 minutes. Drain and rinse with cold water. Set aside to drain well.
- Cut cucumber, bell pepper, and onion into bite sized pieces. Place into the bowl you will be using for the salad.
- Cut tomatoes in half and and in half again and deseed. Cut into bite sized pieces. Add to the bowl.
- Cut stem and bottom off zucchini. Shred zucchini and add to the other vegetables.
- Make sure the pasta is very well drained, and add to the bowl.
- Pour salad dressing over pasta and vegetables. Use as little or as much as you like. I think it needs quite a bit since the pasta will soak some up.
- Add the italian seasoning.
- Mix well and chill at least 4 to 6 hours or over night for best flavors. Stirring occasionally.
- To serve top with diced cheese and pepperoni if using.

- For the dressing: Combine the mayonnaise, sour cream, buttermilk, dill, oregano, paprika, pepper and hot sauce in a bowl and mix to combine.
- For the assembly: Arrange the lettuce on a platter. Drizzle about half of the dressing over the lettuce. Sprinkle the hearts of palm, artichoke hearts, roasted peppers, cherry tomatoes, prosciutto and shaved Parmesan evenly over the greens. Serve the remaining dressing on the side.
