1/4 cup honey
2 tablespoons butter, melted
2 tablespoons Dijon mustard
1 tablespoon orange juice
1/8 teaspoon curry powder
2 boneless skinless chicken breast halves
1 tablespoon vegetable oil
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small bowl, combine the honey, butter, mustard, orange juice and curry powder. Spoon half into a greased 8-in. square baking dish. , In a skillet, brown chicken in oil. Sprinkle with salt and pepper. Place over sauce; turn to coat. , Bake, uncovered, at 350° for 15 minutes. Drizzle with remaining sauce. Bake 5-10 minutes longer or until a thermometer reads 170°.

Quick and easy Honey Mustard Chicken Bites are so tasty and healthy. All you need is a few simple ingredients, a skillet, and less than 20 minutes!

2 Tablespoons honey
1 Tablespoon Dijon mustard
1 Tablespoon apple cider vinegar
1-1 1/2 pounds boneless skinless chicken breasts
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon dried thyme
1 Tablespoon olive oil

Steps:

  • In a small bowl, stir together the honey, Dijon mustard, and apple cider vinegar. Set aside.
  • Cut the chicken into 1/2- to 3/4-inch cubes. Place the chicken cubes in a bowl and sprinkle with salt, pepper, garlic powder, and thyme. Toss to coat.
  • Place a 10-inch cast iron skillet over high heat. Hold your hand about 6 inches above the pan, and when you can feel the heat, add the olive oil and swirl around the pan. Add one piece of chicken to the pan to ensure it starts to sizzle and hiss. If it doesn't the pan is not hot enough, so let it heat for another minute or two. Then add the chicken in a single layer.
  • Let it cook without moving it around for 3-4 minutes or until browned on the first side. Flip and cook for another 3-4 minutes.
  • Pour the honey mustard mixture over the chicken and toss to coat. Let is reduce another 5 minutes or so until the chicken is cooked through and glazed. Serve immediately.
