Steps:

  • Prepare frozen vegetables according to package directions. Meanwhile, in a large skillet, heat 1 tablespoon olive oil over medium-high heat. Pour in eggs; cook and stir until eggs are thickened and no liquid egg remains. Remove from pan., In same skillet, heat 2 tablespoons sesame oil and remaining olive oil over medium-high heat. Add rice; cook and stir until rice begins to brown, 10-12 minutes., Stir in chicken, salt and pepper. Add eggs and vegetables; heat through, breaking eggs into small pieces and stirring to combine. Drizzle with remaining sesame oil.

4 (6 ounce) beef steaks, cubed
1/2 cup flour
4 tablespoons flour
1 teaspoon salt, plus more to taste
1 teaspoon black pepper, plus more to taste
1 teaspoon paprika, plus more to taste
1 cup vegetable oil
3 cups milk, divided

Steps:

  • Combine 1/2 C flour and 1 tsp salt, 1 tsp pepper and 1 tsp paprika on a plate.
  • Stir with fork until well blended.
  • Put 1/2 C milk in bowl.
  • Dip steak in milk first, then coat generously with flour mixture.
  • Heat oil in skillet until it reaches 375°F.
  • Add steaks to skillet.
  • Cook until seared and well crusted on one side, about 2 minutes.
  • Turn steaks with tongs, cook 2 more minutes for medium.
  • Transfer steaks to a plate. Keep warm.
  • To prepare gravy, pour off all but 4 T cooking oil from pan.
  • Return pan to medium heat.
  • Whisk in remaining 4 T flour; cook 1 minute.
  • Whisk in milk; cook until thick, 3 minutes.
  • Add more milk if gravy becomes too thick.
  • Season with salt, pepper, and paprika.
  • Serve with steak and mashed potatoes.

1 quart buttermilk or milk
2 tablespoons Tabasco or other hot sauce
1 3- to 3 1/2- pound chicken, cut into 8 pieces and each breast cut in half again (reserve the neck, back, and wing tips for another purpose)
1 cup all-purpose flour
1 1/2 teaspoons coarse salt, plus a little more for sprinkling
1/2 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
2 cups peanut oil, vegetable oil, bacon fat, or lard

Steps:

  • In a 9-by-13-inch baking dish, stir together the buttermilk and Tabasco. Submerge the chicken parts in the mixture and leave as long as possible, at least 10 minutes (but up to overnight -- in the fridge -- is even better).
  • In a plastic or paper bag, combine the flour, salt, black pepper, and cayenne.
  • Shake the chicken parts, 2 or 3 pieces at a time, in the flour. Repeat with the remaining chicken. Shake off the excess flour. In a 14-inch skillet (or two smaller skillets), heat 2 inches of oil over high heat until very hot. Test with a tiny bit of chicken skin. If the oil bubbles immediately, it is hot enough.
  • Place the chicken into the hot oil. Evenly distribute as many pieces as will fit in one layer in the pan, leaving 1/2 inch between pieces, and leave to fry undisturbed for about 15 minutes. Lower the heat as necessary to prevent excessive browning before the meat is cooked properly; the oil should continue to bubble steadily. Turn the pieces and cook for an additional 15 to 20 minutes.
  • Remove to a rack to drain. Repeat the process to cook all the chicken. To keep the first batch warm, place on a rimmed baking sheet in a 200-degree oven. Sprinkle with salt and serve.

2 fresh bay leaves

4 skin-on, boneless chicken breasts with drummettes (lower part of the wing) attached
8 cups canola oil
3 cups all-purpose flour
1 tablespoon cayenne pepper
1 tablespoon celery seeds
1 tablespoon paprika
1 tablespoon freshly ground black pepper
3 cups buttermilk
6 ears fresh corn
2 tablespoons olive oil
1/2 yellow onion, diced
2 cups chicken stock
Kosher salt

2 bunches collard greens, stemmed and coarsely chopped

Steps:

  • For the fried chicken: Bring 8 cups water, 1 cup of the salt, the peppercorns, sugar, bay leaves, garlic and onions to a low boil in a large pot. Remove from the heat, add 8 cups crushed ice and stir until cool. Taste to check if it is too salty, adding more water if necessary. Add the chicken to the brine and refrigerate for 6 hours.
  • For the "creamed" corn: Allow yourself a large working surface. Cut the corn kernels off the cobs, moving slowly as they have a tendency to fly everywhere. Using the back of your knife, scrape the cobs to extract the "milk" into a bowl.
  • In medium saute pan, heat the olive oil until almost smoking. Add the onions and cook until lightly caramelized. Add the corn kernels and "milk" and cook until tender, 5 to 7 minutes. Remove from the heat.
  • In a blender, pulse half of the corn with the stock to achieve a coarse consistency. Return the mixture to the pan with the remaining corn and heat through, reducing until desired thickness. Season with salt and pepper.
  • In a 5-quart Dutch oven (or similar pot), heat the canola oil over medium heat until a deep-fry thermometer inserted in the oil registers 350 degrees F.
  • In a medium mixing bowl, combine the flour, the remaining 2 tablespoons salt, the cayenne, celery seeds, paprika and ground black pepper. Pour the buttermilk into another medium mixing bowl.
  • Remove the chicken from the brine and pat dry. Designate one hand the wet hand and one hand the dry hand. Working one at a time, dredge each breast in the flour mix (dry hand), then in the buttermilk (wet hand) and then back in the flour mix (dry hand). Shake off the excess flour and put the chicken on a plate to dry. Repeat with the remaining breasts.
  • Carefully place the chicken breasts, one by one, into the oil in the Dutch oven and cook for about 5 minutes, moving the pieces occasionally to avoid sticking. Turn over and cook until golden brown and an internal temperature of 180 degrees F, about 10 minutes. Transfer to paper towels to rest for 5 minutes.
  • For the quick collard greens: Heat the olive oil in a medium saute pan over medium-high heat. Add the onions and cook until caramelized. Add the sherry vinegar and sugar and cook for 1 minute. Deglaze with half of the stock, reducing for 2 minutes. Add the collards in two batches and saute for 3 minutes, stirring occasionally. Add the remaining stock and season with salt and pepper.
  • Serve the chicken with the collard greens and corn.

Orange Chicken - quick, easy and baked, not fried; this Chinese style take out dish uses frozen orange juice concentrate as the base of the tangy sauce.

4 large boneless skinless chicken breasts (or 8 boneless skinless, well-trimmed chicken thighs)
tbsp a few peanut or canola oil
1 cup flour
1 tsp fine salt
1 tsp black pepper
1 tsp powdered ginger
1 tsp five spice powder
1 egg + 2 Tbsp water
3 cloves minced garlic
1 tbsp peanut oil or canola oil
1 1/4 cups frozen orange juice concentrate, Approximately. I used a 295 ml container
1 tbsp freshly grated ginger root
1/2 cup water
1/3 cup honey
1/4 cup rice wine vinegar
1 tsp Chinese five spice powder
2 tsp crushed chili paste, or chili flakes to taste
2 tbsp light soy sauce
2 tsp toasted sesame oil
2 tbsp corn starch dissolved in 1/4 cup water

Steps:

  • Heat a cookie sheet in the oven at 425 degrees F. This speeds up the cooking time later.
  • Cut the chicken into about 2-bite pieces and season them lightly with salt and pepper
  • Sift together the flour, salt, pepper, powdered ginger and five spice powder.
  • Whisk together the egg and water to make an egg wash.
  • Dredge the chicken pieces into the flour dredge to coat them, then dip the pieces into the egg wash and back into the flour and spice dredge again.
  • Working quickly, retrieve the cookie sheet from the oven and lightly brush the entire bottom with the oil. Add the coated chicken pieces to the pan but don't crowd them together. They should not be touching. Lightly drizzle a little more oil over the chicken pieces. A spray bottle works well for this too.
  • Pop the chicken into the oven for 8 minutes. Take the pan out and turn the chicken pieces over before putting them back into the oven for another 7-8 minutes. Cut one open to see that they are fully cooked. This should be plenty of time at that temperature.
  • Toss the cooked chicken pieces wight he sauce and serve over steamed rice or Chinese noodles.
  • Garnish with toasted sesame seeds and chopped green onions if you like.
  • In a small saucepan over medium heat, quickly sauté the garlic in the peanut oil for only a minute or so.
  • Add all of the remaining ingredients to the pot, except the cornstarch and water.
  • Bring the sauce to a slow simmer for 5 minutes.
  • Stir the cornstarch into the water and immediately add it to the sauce stirring constantly. Simmer for only another minute, stirring constantly before serving.

1 1/4 cups panko breadcrumbs
1/3 cup finely grated parmesan cheese
1/2 teaspoon cayenne pepper
1 tablespoon fresh thyme leave, roughly chopped, from about 8 sprigs thyme
3/4 cup all-purpose flour
1 cup milk
4 tablespoons olive oil, divided, plus additional as necessary
1 cup packed baby arugula
1 tablespoon lemon juice, plus additional lemon wedges for serving

Steps:

  • Preheat oven to 450 degrees F.
  • Season chicken breast strips with salt and pepper. Combine panko, parmesan, cayenne, and thyme on a large plate. Season with salt and pepper. Place flour onto another large plate. Pour milk onto a third large, shallow plate.
  • Bread strips: Lightly coat strips in flour, followed by a dip in milk, and then place into the panko mixture, making sure to coat strips on all sides.
  • Heat a large, ovenproof skillet over high heat. Add 3 tablespoons olive oil, swirl to coat, and add chicken strips, in 2 batches if necessary so as not to overcrowd. A super easy and tasty chicken recipe that cooks up quickly for those days when you want a nice result without necessarily making a big effort :)I never use *only* a small amount of cilantro (coriander) personally I use a whole handful, but I love the stuff...

500 g chicken breast fillets (about 1 lb)
2 tablespoons oil
2 garlic cloves, finely chopped (I mince mine in a garlic press)
3 spring onions
1 tablespoon soy sauce
2 tablespoons white vinegar (Rice vinegar or Wine vinegars are in the original recipe -you choose which you prefer or have on han)
1/4 teaspoon chili powder
2 teaspoons sugar
1/4 cup chicken stock (or instant stock powder in 1/4 cup water)
1 teaspoon cornflour (cornstarch)
1 -2 tablespoon Thai sweet chili sauce
2 -3 tablespoons fresh coriander (Cilantro) or 2 -3 tablespoons fresh basil (optional, but coriander is gorgeous)

Steps:

  • Slice chicken fillets into thin strips.
  • Mix chicken with oil, garlic, spring onions, soy sauce, vinegar, chili powder and chili sauce and sugar.
  • Using a high heat, fry chicken mixture in a large frypan until chicken is well cooked through, stirring all the time (since the chicken is sliced thinly, this takes only a few minutes).
  • The mixture will reduce slightly as the chicken cooks.
  • Mix cornflour with the chicken stock (or water) in a small cup, so there are no lumps.
  • Add cornflour mixture to the chicken mixture and cook on high until mixture reduces by half (Watch out, this literally takes 30 seconds to a minute).
  • Toss in the coriander.
  • Serve on rice or noodles with a salad.
  • I often omit the chili sauce if serving to young children and it tastes a little bit more bland but great all the same.
  • This cooks so fast that I cut up the chicken, put it in the fridge, have everything else ready in the frypan and the cornflour and coriander ready to go and just fling everything together at the very last moment.
  • Making it too far in advance means that the sauce gets so thick that it starts sticking terribly to the bottom of the frypan.
  • 90% of the cook time is the time it takes to crush the garlic, chop the onions, mix the cornflour etc. Time in the frypan is +/- 4 minutes.

  • Bone the chicken legs being careful to leave the skin on. Pat the skin side dry with a paper towel and salt liberally.
  • Meanwhile heat the oil in a large frying pan on medium heat.

4 cups cold cooked rice
2 tablespoons soy sauce

Steps:

  • Beat eggs with a whisk in a small bowl and season with salt and pepper. Heat very little oil in a medium frying pan over medium heat and make an omelette. Coarsely chop. Set aside. In a medium bowl, toss chicken strips and season with salt and pepper, to taste. Heat 3 tablespoons vegetable oil over high heat in large frying pan or wok and stir-fry the prepared chicken strips until lightly golden, about 2 to 3 minutes. Coarsely chop. Set aside Re-add the chicken to the pan and add the onion and garlic and stir-fry until onion has softened. Add 2 tablespoons more vegetable oil and when hot, stir in the cooked rice, tossing and mixing thoroughly until very hot. Sprinkle with soy sauce and mix evenly. Remove from heat and stir in chopped cooked egg. Bon appetit!
