Simple broiled chicken tenders are easy to make and are perfect for a quick weeknight dinner. If you are looking for an easy chicken recipe, there is no need to look any further.

1 pound chicken tenders
1/4 cup vegetable oil
1 tablespoon lemon juice
2 teaspoons soy sauce
1 teaspoon garlic chopped
1 tablespoon onion chopped
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/4 teaspoon salt or to taste
1/8 teaspoon pepper or to taste

Steps:

  • Combine the vegetable oil, lemon juice, soy sauce, garlic, onion, oregano, and parsley and add to a zip lock bag and combine.
  • Place the chicken in the bag and coat the chicken with the marinade. Place in the refrigerator for several hours or more. Turning the bag a few times during that time.
  • Preheat broiler.
  • Spray the broiler pan with a non-stick cooking spray. Place the chicken tenders on the pan.
  • Place the oven rack 4 inches from the broiler
  • Place the chicken under the broiler, broil for 4 to 5 minuter or until brown
  • Flip the chicken over and continue to broil 3 to 4 minutes longer or until the tenders are no longer pink inside.

½ cup salted butter
¼ cup vegetable oil
1 small yellow onion, chopped
1 clove garlic, minced
2 tablespoons lemon juice
1 teaspoon salt
½ teaspoon ground paprika
½ teaspoon ground ginger
4 (4 ounce) skinless, boneless chicken breast halves

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Combine butter, vegetable oil, onion, garlic, lemon juice, salt, paprika, and ginger in a small saucepan over medium heat. Stir until butter is completely melted, about 3 minutes. Reduce heat to low and simmer until onion is translucent, 5 to 7 minutes.
  • Place chicken in a baking dish and baste with the butter sauce.
  • Broil in the preheated oven, basting and turning every 10 minutes, until chicken is no longer pink in the center and the juices run clear, 30 to 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

This very easy dish works with any cut of chicken, skin on or off...even with whole split chickens. My family loves this and it takes no time at all. Don't omit the parsley.

½ cup butter
3 tablespoons minced garlic
3 tablespoons soy sauce
¼ teaspoon black pepper
1 tablespoon dried parsley
6 boneless chicken thighs, with skin
dried parsley, to taste

Steps:

  • Preheat the oven broiler. Lightly grease a baking pan.
  • In a microwave safe bowl, mix the butter, garlic, soy sauce, pepper, and parsley. Cook 2 minutes on High in the microwave, or until butter is melted.
  • Arrange chicken on the baking pan, and coat with the butter mixture, reserving some of the mixture for basting.
  • Broil chicken 20 minutes in the preheated oven, until juices run clear, turning occasionally and basting with remaining butter mixture. Sprinkle with parsley to serve.

4 boneless skinless chicken breasts
1/4 cup low-fat mayonnaise
1 tablespoon Dijon mustard
2 cloves garlic, minced
salt and pepper
1/4 cup grated parmesan cheese

Steps:

  • Prepare marinade in a large Ziplock bag or in a shallow glass dish.
  • combine mayo, mustard, garlic, salt& pepper.
  • place chicken in the marinade coating it well.
  • Refrigerate for 30 minutes.
  • Line a broiler pan with tin-foil, Spray with oil.
  • Remove chicken from the marinade, Discard marinade.
  • Broil 4" from heat turning once (approximately 16 minutes).
  • Sprinkle parmesan cheese on top, return to broiler until cheese is golden.

BROILED LEMON-GARLIC CHICKEN

2 lemons
2 tablespoons unsalted butter, at room temperature
2 to 3 cloves garlic, finely chopped
Kosher salt and freshly ground pepper
2 half chickens (3 to 3 1/4 pounds total)

Steps:

  • Position an oven rack about 8 to 10 inches from the broiler and preheat. Grate the lemon zest and combine in a small bowl with the butter, garlic, 1/2 teaspoon salt, and pepper to taste. Mash with a fork to make a smooth paste.
  • With your fingers, gently loosen the skin on the chicken breasts, legs and thighs. Spread the flavored butter under the skin as evenly as possible. Halve the lemons and squeeze 2 halves over the chicken; season with salt and pepper.
  • Place the chicken skin-side up on a broiler pan (or a rack on a baking sheet). Position the halves about 2 inches apart with the thick parts of the legs facing the center. Arrange the remaining 2 lemon halves cut-side down next to the chicken.
  • Broil the chicken until the skin is light brown and crisp, about 8 minutes. If the chicken browns too quickly, lower the oven rack. Flip the chicken and the lemons and continue to broil until almost cooked through (a thermometer inserted into the thickest part will register 160 degrees), about 15 minutes. Remove the lemons, if browned; turn the chicken again and broil until the skin is brown and crisp and the thermometer registers 165 degrees, about 2 more minutes. Serve the chicken with the broiled lemons for squeezing on top.
