½ cup panko bread crumbs
⅓ cup Parmesan cheese
¼ teaspoon paprika
¼ teaspoon salt
¼ teaspoon ground black pepper
3 tablespoons melted butter
2 teaspoons white wine
1 teaspoon Dijon mustard
1 clove garlic, crushed
4 skinless, boneless chicken breast halves, pounded to an even thickness

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
  • Whisk bread crumbs, Parmesan cheese, paprika, salt, and black pepper together in a shallow bowl. Stir butter, white wine, mustard, and garlic together in another bowl.
  • Dip each chicken breast half into melted butter mixture; press into bread crumb mixture to evenly coat. Place breaded chicken in a single layer on the prepared baking sheet. Pat any leftover bread crumb mixture onto chicken breasts.
  • Bake chicken in the preheated oven until no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2 pounds chicken tenders or 4 large chicken breasts
2 sleeves Ritz crackers
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup whole milk
3 cups cheddar cheese, grated
1 teaspoon dried parsley
SAUCE
1 (10 ounce) can cream of chicken soup
2 tablespoons sour cream
2 tablespoons butter

Steps:

  • Crush crackers. If using chicken breasts and not tenders, cut each chicken breast into 3 large pieces. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the salt and pepper into the cracker crumbs and stir the mixture around to combine. Dip each piece of chicken into the milk and then the cheese. Press the cheese into the chicken with your fingers. Then press the cheesy coated chicken into the cracker crumbs and press it in. Spray a 9×13 pan with cooking spray and lay the chicken inside the pan. Sprinkle the dried parsley over the chicken. Cover the pan with tin foil and bake at 400 degrees Fahrenheit for 35 minutes. Remove the tin foil, bake for an additional 10 to 15 minutes, or until the edges of the chicken are golden brown and crispy. In a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.

4 cups cornflakes, crushed
1 tablespoon vegetable oil
1/2 teaspoon coarse salt
1/4 teaspoon ground pepper
1 teaspoon crumbled dried rosemary or thyme
Bone-in chicken pieces
1 large egg
1 tablespoon water

Steps:

  • For the Crispy Cornflake Coating: In a large resealable plastic bag, combine 4 cups cornflakes, crushed, 1 tablespoon vegetable oil, 1/2 teaspoon coarse salt, 1/4 teaspoon ground pepper, and 1 teaspoon crumbled dried rosemary or thyme. Makes 1 3/4 cups.
  • Heat oven to 400 degrees. Working with a couple of pieces at a time, dip chicken in egg wash (1 large egg beaten with 1 tablespoon water), and add to the mixture in the bag, shaking and patting to coat. Arrange chicken on a rimmed baking sheet, and bake until cooked through, about 30 minutes.
