- Heat butter in a large skillet over medium heat. Cook and stir onion, bacon, and garlic until bacon is crisp, 5 to 7 minutes.
- Whisk flour, salt, and black pepper into onion mixture until blended and the flour and drippings form a paste, 1 to 2 minutes.
- Slowly whisk milk into onion mixture. Bring to a boil, continuously whisking, until sauce is thick and creamy, 3 to 5 minutes.
- Stir spinach and half-and-half into sauce; cook until spinach is heated through, 4 to 6 minutes.

- In a large nonstick skillet, saute onion and garlic in butter until tender. Stir in flour until blended. Gradually whisk in half-and-half until blended. Bring to a boil over medium-low heat; cook and stir for 2 minutes or until slightly thickened., Add the cream cheese, salt, nutmeg and pepper, stirring until cream cheese is melted. Stir in spinach and 1/4 cup Parmesan cheese; heat through. Sprinkle with remaining Parmesan cheese. Serve immediately.

QUICK CREAMED SPINACH
A spinach dish, creamed with a roux of butter, flour and water. It's very easy to make, but slightly time consuming on account using fresh spinach. It is well worth the effort though!

- Wash spinach well and remove any hard stems. In a large pot, bring water to a boil and add spinach (it will cook down very rapidly). Remove spinach from the stovetop, let cool slightly then drain reserving the water.
- Using an electric food processor, puree the spinach.
- Make roux with the butter, flour and reserved water. Add the roux to the spinach, stir and serve.

QUICK & EASY CAJUN CREAMED SPINACH
This recipe was thrown together to try to mimic a hybrid between spinach dip & spinach Madeleine, but slightly less rich so it would be a suitable side vegetable without being overpowering. I think the cheeses would be interchangeable with almost any, I used what I had on hand. Monterrey Jack would probably be a great substitute for the italian blend cheeses

- Saute' chopped onion & minced garlic in butter until soft.
- Add fresh spinach (cut in thick strips) and defrosted or microwaved frozen spinach until wilted.
- Melt in the cream cheese, sour cream, and other cheeses. As your sauce develops and thickens, add your seasoning. If you are using feta cheese, throw it in at the very end.
- Do not overcook-part of the charm of this dish is the fresh taste of the baby spinach-don't kill it!

GRILLED WAGYU BEEF WITH QUICK CREAMED SPINACH

- Combine the oil, garlic, rosemary, and salt and pepper, to taste, in a medium bowl. Add the steak and coat well. Allow to the steak to marinate for 20 to 30 minutes while preheating the grill. If using a gas grill, preheat the grill to high, direct heat. If using coals, allow the coals to burn down to glowing white embers. The grill is hot enough when you can only hold your hand about 1-inch over it for only a second.
- Lightly grease the grill with olive oil to prevent sticking. Grill the steak for 4 to 6 minutes per side, or to desired doneness. Remove the steak from the grill to a cutting board. Allow it to rest for 10 minutes, tented in foil to maintain the heat.
- Meanwhile, in a large pan over medium-high heat, add the butter and when melted saute the garlic until it softens, about 1 minute. Don't allow it to brown. Add the spinach and saute until dry. Add the cream, Parmesan and nutmeg and cook until thick and creamy. Season with salt and pepper, to taste. Transfer to a serving bowl and set aside until ready to serve.
- If using wagyu, cut the steak into portions. If using flank steak, carve it into thin slices, against the grain, and at a slight diagonal so that the slices are wide. Arrange the steak on a serving dish and serve warm with the spinach.
