QUICK CHICKEN QUESADILLAS
With a few simple shortcut ingredients, you can have warm and cheesy homemade quesadillas on the dinner table in less than half an hour. If you need to master the basic steps of how to make chicken quesadilla, this is the place to start.

Steps:
- Cut chicken into bite-size pieces. In small bowl, mix chicken and salsa.
- Spray 1 side of 1 tortilla with cooking spray; place sprayed side down on work surface. Layer with one-fourth of the chicken mixture and 1/2 cup of the cheese. Top with another tortilla; spray top of tortilla with cooking spray.
- Cook in 10-inch nonstick skillet over medium heat 4 to 6 minutes, carefully turning after 2 minutes, until golden brown. Repeat with remaining tortillas, chicken mixture and cheese. To serve, cut quesadillas into wedges. Serve with sour cream and, if desired, additional salsa.

Steps:
- Drain water from canned chicken and canned tomatoes and chiles.
- flake chicken and mix with tomatoes and chiles, and shredded cheese in a bowl.
- Spead mixture over one side of tortillas as thin
- or as thick as you like.
- Fold tortilla and place in electric skillet on 325 degrees or on stove at medium high heat.
- Brown tortilla on one until side crispy then flip and do the same on other side.
- Place tortillas on plate to cool.
- Serve with LIPTON Spanish Rice mix for complete meal if desired.

QUICK CHICKEN & BLACK BEAN QUESADILLAS
Quick, easy, and not too spicy! This scrumptious recipe conveniently makes use of items in your pantry. Great football or party food. Tested at high altitude.

Steps:
- Begin preheating oven to 375°F.
- Place chunk chicken in small bowl and flake lightly with fork.
- Combine spices in small bowl and sprinkle evenly over chicken.
- Toss well to coat.
- Set chicken mixture aside for 10 minutes.
- Place one tortilla on a baking pan.
- Spoon half the chicken mixture onto tortilla and spread evenly to within 1/4" of edge.
- Spoon half the can of black beans on top of the chicken and spread evenly.
- Sprinkle half the cheese on top of the beans, spreading evenly.
- Top fillings with another tortilla.
- Spray top tortilla lightly with non-stick cooking spray.
- Repeat process with two remaining tortillas and fillings.
- Bake at 375°F for 10-15 minutes or until tortilla edges are slightly crisp and center is warm.
- Remove from oven and allow to cool for 2 minutes.
- Using a pizza cutter, carefully cut each quesadilla into 4-6 wedges.
- If desired, serve with individual bowls of salsa and/or sour cream for dipping.
- Serves 2-3 as a meal, 4-8 as an appetizer.
