1 ⅓ cups all-purpose flour
½ teaspoon salt
½ cup shortening
4 tablespoons cold water
1 pound lean ground beef
1 small onion, chopped
1 clove garlic, minced
½ teaspoon salt
¼ cup all-purpose flour
⅓ cup dill pickle juice
⅓ cup milk
½ cup chopped dill pickles
2 cups shredded Swiss cheese, divided

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • To Make Pat-in-Pan Pastry: In a medium bowl, mix 1 1/3 cups flour and 1/2 teaspoon salt. Cut in shortening until mixture resembles tiny peas. Add cold water 1 tablespoon at a time, stirring with a fork after each addition. Mix lightly just until pastry almost cleans sides of bowl. Pat into bottom and sides of an 8 inch pie pan. Bake in preheated oven for 15 minutes.
  • To Make Filling: Crumble ground beef into a large skillet and saute over medium heat for 1 minute. Add onion and garlic. Continue to saute until onion is browned, about 10 minutes. Drain grease from mixture.
  • Sprinkle beef mixture with 1/2 teaspoon salt and 1/4 cup flour. Stir in pickle liquid, milk, pickles, and 1 cup shredded cheese. Spoon mixture into pastry shell.
  • Bake in preheated oven for 15 minutes. Sprinkle top with remaining 1 cup cheese and bake an additional 5 minutes, until pastry is golden brown and cheese is bubbly.

When my kid's were young and I was broke (single Mom), this was a reoccurring 'staple' at our dinner table! The kid's loved it, and it only took a few mins to throw together after a long day at work!

1 lb ground beef
1/2-3/4 c finely chopped onion (sweet)
1-2 clove garlic, finely chopped
1/2 tsp salt
1/4 c all purpose flour
1/3 c dill pickle juice
1/3 c milk
1/2-1 c dill pickle, finely chopped
2-2 1/2 c cheese, shredded
1 pkg refrigerated pie crust

Steps:

  • 1. Heat the oven to 425*. Place pie crust in glass pie pan (prick bottom of shell),bake for approx 15mins.
  • 2. Cook and brown beef (broken up into small pieces), onion, garlic in 10 inch skillet until brown; drain off grease. Sprinkle with salt and flour. Stir in pickle liquid, milk, pickles and 1-1 1/2 cups of shredded cheese (I use the package kind or grate my own off a block). Spoon into pie shell.
  • 3. Bake 15 mins; sprinkle the rest of shredded cheese over top. Bake until crust is golden brown, about 5 mins longer.

This is the recipe from the Alpha-Bakery Gold Medal cookbook. Simple dinner that actually taste a lot better then it looks on paper. This was one of my favorites growing up and was sad to not see it on this site, so I'm changing that!

1 lb hamburger
1/2-3/4 cup finely chopped onion
1 garlic clove, finely chopped
1/2 teaspoon salt
1/4 cup flour
1/3 cup pickle juice
1/3 cup milk
1/2 cup chopped dill pickle
2 cups shredded cheese
1 1/3 cups flour
1/2 teaspoon salt
1/2 cup shortening

Steps:

  • Heat oven to 425 degrees F.
  • Prepare crust. Mix last three ingredients together then cut in 1/2 cup shortening with pastry blender or fork until the size of tiny peas. Sprinkle with 3-4 tablespoons water, 1 tablespoon at a time. Stirring with fork after each addition. Mix lightly until all flour is moistened and pastry almost cleans from side of bowl (add 1-2 teaspoons water if necessary.) Pat in the bottom and up sides of a round pan 8 inches x 1 1/2 inches.
  • Bake 15 minutes.
  • Cook beef, onion, and garlic in pan until brown, drain. Sprinkle with salt and flour. Stir in pickle juice, milk, pickles and 1 cup cheese. Spoon into crust.
  • Bake 15 minutes, sprinkle with 1 cup cheese bake until crust is golden brown, about 15 more minutes.
