QUICK BEEFY CHINESE BURRITOS
These are reminiscent of mu-shu, but much simpler. Use the shredded cole slaw mix from the produce dept or shred a small head of cabbage. Quick and easy to make, dinner will be on the table in less than 30 minutes.

Steps:
- Heat oil in saucepan on medium heat. Add beef and garlic and cook until browned, about 10 minutes, drain.
- Add mushrooms and cook for 5 minutes. Add carrots, cabbage and cook another 5 minutes.
- Mix together hoisin sauce, sesame oil, and water. Pour over beef and vegetable mixture. Stir to combine.
- Cover and let mixture steam for 5 minutes.
- Spread 1 T hoisin sauce onto each tortilla. Top with 1/2 cup of beef/vegetable mixture. Roll up and serve.

CHEESY BEEF BURRITOS
A filling, quick and easy lunch or dinner that my teenage son and friends love! Some of the measurements are an estimate and you should adjust according to taste and how many burritos you are making.

Steps:
- Bring beef stock to a boil.
- Add rice, cover and lower heat, cook for 20 minutes.
- Heat olive oil over medium heat.
- Add onions to oil and cook until translucent.
- Add ground beef to the onions and break it up using a spatula or wooden spoon, stir occasionally until browned.
- Drain off excess fat.
- Add water and taco seasoning.
- When rice is finished stir and add to meat.
- Heat a grill pan over medium high heat.
- Microwave tortillas in on a plate covered with a damp paper towel on high for 30 seconds.
- Place a mound of the meat and rice mixture in the center of the tortilla.
- Cover with a layer of shredded cheese.
- Add a spoonful of sour cream on top of the cheese.
- Fold the tortilla into a burrito.
- Place the burrito on the heated grill pan and cover with a bacon press or other heavy object, let cook for a couple of minutes, just long enough to get grill marks.
- Turn the burrito over and place the bacon press on top and cook for another 2 - 3 minutes.
- Serve (my son likes a spoonful of sour cream on the side as well).

- Brown ground beef with onion and drain.
- Add chili powder and mix well.
- Spoon 1/4-1/2 cup beef mix and 1/4 cup cheese in center of a tortilla.
- Roll up and arrange in a greased 9X13 pan.
- In a bowl, combine soup, salsa, milk, green chiles and mix well.
- Pour mix over burritos.
- Top with remaining cheese.
- Bake at 350 degrees for 40 minutes.

- Preheat oven to 350 degrees F.
- Cook ground beef in 12-inch nonstick skillet over medium-high heat, stirring occasionally, until beef is done, about 5 minutes. Remove beef mixture and set aside.
- Stir Knorr® Rice Sides™ - Cheddar Broccoli, water and beans into same skillet and bring to a boil over high heat. Reduce heat to medium and cook covered 7 minutes or until rice is tender. Stir in beef mixture. Remove from heat and let stand 2 minutes. Stir in 1/2 cup salsa and 1/2 cup cheese.
- Spoon about 3/4 cup rice mixture onto each tortilla; roll-up.
