3 cans (15 ounces each) reduced-sugar apricot halves, drained
2 tablespoons brown sugar
1/2 teaspoon ground ginger
TOPPING:
1/4 cup all-purpose flour
3 tablespoons brown sugar
3 tablespoons quick-cooking oats
2 tablespoons sweetened shredded coconut
1/4 cup cold butter, cubed

Steps:

  • Preheat oven to 400°. In a large bowl, combine apricots, brown sugar and ginger. Divide among four greased 8-oz. baking dishes. , In a small bowl, combine flour, brown sugar, oats and coconut. Cut in butter until mixture resembles coarse crumbs. Sprinkle over apricots. , Bake 15 minutes or until filling is bubbly and top is golden brown.

2 pounds Apricots (ripe but firm, do not peel; (about 10-12 apricots))
¼ cup Granulated sugar
1 ½ teaspoons Corn starch
1 teaspoon Cinnamon
3/4 cup All-purpose flour (regular or gluten-free*)
1/3 cup Packed Brown sugar
1/2 teaspoon Kosher Salt
1 cup Old-Fashioned Rolled Oats (regular or gluten-free; do not use Instant Oats)
½ teaspoon Cinnamon
1/2 cup Unsalted butter (cold, cut into slices)

Steps:

  • Preheat oven to 350 degrees.
  • Slice apricots in half and remove the pits. Slice each half into quarters.
  • Place apricots slices in a large bowl and toss with sugar, corn starch, and cinnamon.
  • Pour coated apricots into a small casserole dish.
  • To make the crumble layer whisk together flour, brown sugar, salt, and oats.
  • Cut in the butter until the mixture is coarse and crumbly.
  • Sprinkle topping over apricots.
  • Bake for 35-40 minutes or until the juices are bubbling and the topping is golden brown.
  • Serve warm or at room temperature with a scoop of ice cream, if desired.

¼ cup white sugar
¾ cup brown sugar
½ cup all-purpose flour
½ cup butter
¾ cup rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange the apricots in a 9x12-inch baking dish and sprinkle with white sugar. Mix together brown sugar and flour in a bowl; cut in the butter with a pastry cutter until the mixture resembles coarse crumbs. Lightly stir in the rolled oats and spoon the mixture over the apricots.
  • Bake in the preheated oven until the fruit is soft and the topping is browned and crisp, 35 to 40 minutes.

1 (20-ounce) can pineapple chunks in juice, drained and 1/2 cup juice reserved
1 cup (6 ounces) quartered dried apricots
3/4 teaspoon ground cinnamon
1/4 teaspoon arrowroot
1/2 cup flour
1/2 cup quick-cook oats
1 stick unsalted butter, chilled, cut into 1/2-inch pieces
1/2 cup light brown sugar, packed
1/3 cup chopped pecans
1/4 teaspoon fine salt

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 425 degrees F. Spray 4 (10-ounce) ramekins with vegetable oil cooking spray. Set aside.
  • For the filling: In a medium bowl, mix together the pineapple chunks, apricots, cinnamon, arrowroot, and reserved pineapple juice. Divide the mixture equally between the ramekins.
  • For the topping: In a food processor, combine the flour, oats, butter, sugar, pecans, and salt. Pulse together until the butter is the size of peas.

¾ cup white sugar
1 tablespoon cornstarch
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
6 cups halved fresh apricots
1 tablespoon butter
2 cups all-purpose flour
¼ cup white sugar
1 tablespoon baking powder
1 teaspoon salt
7 tablespoons butter
2 tablespoons white sugar
1 ½ cups milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Bring water, 3/4 cup sugar, cornstarch, cinnamon, and nutmeg to a boil; stir until thickened, about 1 minutes. Reduce heat to medium and add apricots and 1 tablespoon butter. Simmer until heated through, about 5 minutes. Transfer mixture to a 9x13-inch baking dish.
  • Combine flour, 1/4 cup sugar, baking powder, and salt in a large bowl. Cut 7 tablespoons butter into flour mixture until mixture resembles a coarse crumb. 1 1/4 cups all-purpose flour
1/4 cup walnuts (or almonds)
1 1/4 cups sugar
8 ounces butter
1 pinch ground cloves
1 pinch ground cardamom
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375°F.
  • Slice apricots in half and discard stone.
  • Cover bottom of a shallow, buttered oven proof dish with two layers of apricots.
  • Place flour, walnuts,sugar, butter, cloves,cardamom, and ground cinnamon into a food processor and blend until it is like breadcrumbs. Spread mixture on top of apricots.
