- One: Thread a mint leaf and a marinated artichoke heart on the skewer; dust with cheese.
- Two: Thread a grape, chunk of cheese, and a chunk of chorizo on the skewer.
- Three: Thread a watermelon chunk, fresh basil leaf, followed by a cherry tomato; drizzle with olive oil and sea salt.
- Four: Thread a slice of jalapeno, chunk of avocado, and a wedge of jicama onto a skewer; spritz with a squeeze of fresh lime juice.
- Five: Drizzle mozzarella balls with olive oil. Roll one in red pepper flakes; wrap another with an anchovy fillet; squeeze third with lemon juice. Thread all three onto one skewer.
- Six: Thread half a caper berry, a chunk of roasted red pepper, and a crouton on a skewer: drizzle with extra virgin olive oil.
- Seven: Thread red pepper onto a skewer. Roll goat cheese in oregano, then thread onto skewer with red pepper.
- Eight: Thread skewer with feta cheese, tomato, cucumber, and olive.
- Nine: Wrap prosciutto around a small piece of rustic bread; thread onto a skewer with a leaf of fresh mint or fresh basil.

- In a large resealable plastic bag, combine 1/2 cup salad dressing and shrimp. Cut each onion into eight wedges. In another large resealable plastic bag, combine the vegetables and remaining dressing. Seal bags and turn to coat. Refrigerate for 2 hours, turning occasionally., Drain and discard marinade. On eight metal or soaked wooden skewers, alternately thread the shrimp and vegetables. Grill kabobs, covered, over medium heat or broil 4 in. from the heat for 6 minutes or until shrimp turn pink, turning occasionally.
