3 large eggs
3 tablespoons 2% milk
1/8 teaspoon pepper
1 tablespoon plus 2 teaspoons butter, divided
4 flour tortillas (8 inches)
1/2 cup refried beans
1/4 cup salsa
2/3 cup shredded cheddar cheese
Optional: Sour cream and additional salsa

Steps:

  • Preheat oven to 425°. Whisk together first 3 ingredients. In a large nonstick skillet, heat 1 tablespoon butter over medium heat. Add egg mixture; cook and stir until eggs are thickened and no liquid egg remains. Remove from heat., Place 2 tortillas on a baking sheet. Spread with beans; top with eggs, salsa, cheese and remaining tortillas. Melt remaining butter; brush over tops., Bake until golden brown and cheese is melted, 10-12 minutes. If desired, serve with sour cream and additional salsa.

1 flour tortilla (8" in diameter)
2 large eggs
1 Pinch salt and pepper
1/4 cup shredded cheese ((1 oz) Mexican cheese, medium cheddar or mozzarella)
3 oz breakfast Sausage (2 patties)
2 slices ham ((2 oz) chopped)
2 slices bacon ((2 oz), sliced)

Steps:

  • Heat a non-stick pan over medium heat. Cook Sausage or Bacon until browned and cooked through then remove to a plate. If using cooked ham, you can heat it up or just add it over the cheese in step 4. Wipe excess oil from skillet if needed. Reduce heat to low.
  • In a measuring cup, add 2 eggs with a pinch of salt and pepper, or add seasoning to taste. Beat with a fork. Add beaten eggs and swirl to spread evenly over the bottom of the pan. Cook over low heat until When eggs are nearly cooked through (if you tilt the pan they shouldn't run).
  • Sprinkle the top with 2 Tbsp shredded cheese then cover with a tortilla. The cheese will make the tortilla stick to the egg. Use a large spatula to get under the egg and quickly flip over.
  • Sprinkle another 2 Tbsp of cheese or add cheese to taste. Sprinkle your cooked protein (sausage, bacon or ham) over half of the surface and fold the tortilla in half. Sautee on both sides until golden brown.* Remove from skillet and use a pizza cutter to cut quesadilla into wedges and serve warm.

1 teaspoon grapeseed oil
1/4 pound beef pepperoni, peeled and thinly sliced
2 tablespoons unsalted butter
6 large eggs
1/2 cup whole milk
Kosher salt and freshly ground pepper
3/4 cup grated cheddar cheese
1 scallion, white and light green parts only, thinly sliced on the bias

Steps:

  • Heat the grapeseed oil in a large nonstick skillet over medium-high heat. Add the pepperoni and fry, turning as needed, until crisp around the edges, about 1 minute. Transfer to paper towels to drain; pour off the fat and wipe out the skillet.
  • Melt the butter in the skillet over medium heat. Whisk the eggs and milk in a bowl; add to the skillet and season with 1/2 teaspoon salt, and pepper to taste. Cook, running a rubber spatula around the edges and along the bottom to prevent the eggs from sticking, until almost set, 2 to 3 minutes; sprinkle with the cheese, pepperoni and scallion, then cover and remove from the heat to finish cooking, about 1 more minute.

2 whole wheat flour soft-taco-sized tortillas (white flour optional)
cheddar cheese
3 eggs
3 large slices of pepperoni or 6-8 small slices
1 tsp of fresh marjoram
Butter (optional)
Tabasco sauce
Salt and pepper to taste

Steps:

  • 1. Get out a griddle, I prefer a large no-stick electric one. You can use a pan over a stove if you want. 2. Make enough cheese to cover 1 tortilla and cover the cheese with the second tortilla 3. Beat the 3 eggs together with fresh marjoram 4. Heat electric griddle to 350 degrees. Throw the tortillas with cheese on the griddle. Cook on one side until the cheese melts. Then flip over to the over side. Tortilla should be a light golden brown. 5. Place your pepperoni slices down the middle of the tortilla 6. Scramble your eggs on the electric griddle. If using a pan, throw a little butter in there so it doesn't stick. 7. Once eggs are done, remove quesadilla onto a plate. Add Eggs over the pepperoni. 8. Add Tabasco, salt and pepper to taste. 9. Let cool for a couple of minutes, then wrap it up like a large taco and eat!

½ medium yellow onion, chopped
1 clove garlic, chopped
2 (4 ounce) skinless, boneless chicken breast halves, chopped
½ cup chicken stock
½ (1 ounce) packet taco seasoning mix
4 large eggs, or more to taste
salt and ground black pepper to taste
1 (10 ounce) can diced tomatoes with green chile peppers, drained
¼ cup chopped fresh cilantro
½ cup shredded Cheddar cheese, divided
4 (6 inch) corn tortillas
2 tablespoons sour cream, or to taste
2 tablespoons guacamole, or to taste
1 dash hot sauce, or to taste

Steps:

  • Melt 1 tablespoon butter in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Add chicken, chicken stock, and taco seasoning; bring to a simmer. Cook until chicken is no longer pink in the center and the juices run clear, about 10 minutes. Remove from the heat and drain, being careful to remove as much liquid as possible, while keeping onions and garlic. Transfer chicken mixture to a plate.
