I prepare this sweet potato dish mostly around the holidays, but it's good anytime. For added convenience, you can prepare it the night before and just pop it in the oven the next day. 3 cups cold mashed sweet potatoes (without added milk or butter)
1/2 cup sugar
1/2 cup butter, melted
2 large eggs, beaten
1/3 cup whole milk
1 teaspoon vanilla extract
1/2 cup sweetened shredded coconut
TOPPING:
1/2 cup packed brown sugar
1/2 cup chopped pecans
2 tablespoons butter, melted
1/4 cup all-purpose flour

Steps:

  • In a bowl, beat sweet potatoes, sugar, butter, eggs, milk and vanilla until fluffy. Stir in coconut. , Spoon into a greased 2-1/2-qt. baking dish. Combine topping ingredients until well blended; sprinkle over sweet potatoes. Bake, uncovered, at 350° for 35-40 minutes or until golden brown.

Creamy, fluffy, rich sweet potatoes with a meringue top. Enjoy sweet potatoes' natural sweetness without drowning it in sugar. This is everyone's favorite. We can't serve Thanksgiving dinner without it!

6 cups peeled, cubed sweet potatoes
4 eggs, separated
¼ cup butter, softened
¼ teaspoon salt
¼ cup raisins
¼ cup coarsely chopped walnuts
¼ cup sugar

Steps:

  • Place the cubed sweet potatoes into a large pot and cover with water. Bring to a boil, then reduce heat to medium-low, and simmer until tender, about 30 minutes. Drain and let cool.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
  • Place the cooked sweet potatoes, egg yolks, butter, and salt into the work bowl of an electric mixer, and beat on high speed until the sweet potatoes are creamy and smooth, 3 to 5 minutes. Spoon the sweet potato mixture into the prepared baking dish, and level the top with a spoon. Sprinkle raisins and walnuts over the top of the casserole, and lightly press them into the surface of the sweet potatoes.
  • In a mixing bowl, beat the egg whites until foamy, about 1 minute. Gradually pour in the sugar and continue beating until the meringue is glossy and holds soft peaks, 2 to 3 more minutes. Spread the meringue over the casserole.
  • Bake in the preheated oven until the casserole is hot and the meringue is lightly browned, about 30 minutes.

If you want something a little different from the normal sweet potato casserole that you serve during the holidays, give this recipe a try!

3 lbs sweet potatoes (about 6 medium-large)
2 (8 ounce) cans crushed pineapple with juice, undrained
1/4 teaspoon ground cinnamon
4 teaspoons butter-flavored sprinkles
1/3 cup chopped pecans or 1/3 cup golden raisin
1 3/4 cups miniature marshmallows

Steps:

  • To cook the sweet potatoes in a conventional oven, bake at 400 degrees for about 45 minutes or until tender.
  • To cook in a microwave oven, prick each potato in several places with a fork, and microwave at high power for about 15 minutes, or until tender.
  • Set aside to cool; then peel and cut into bite-sized pieces.
  • Place the potato pieces in a large bowl and toss with all the remaining ingredients except the marshmallows.
  • Coat a 2-1/2 qt.
  • casserole dish with Pam, and place the sweet potato mixture in the dish.
  • Top with the marshmallows.
  • Bake at 350 degrees for 35-40 minutes, or until the sweet potato mixture is bubbly and the top is lightly browned.
  • If the top starts to brown too quickly, loosely cover the dish with aluminum foil during the last 10 minutes of baking.
  • Serve hot.

I'm often requested to bring this dish to family get togethers, especially for the holidays. I love having this with a spiral ham. Many of the ingredients may be omitted if there is something your family does not like, for example, raisins, pecans or marshmellows.

4 medium sweet potatoes, cooked
4 tablespoons butter
1/2 cup sugar
1/2 cup brown sugar
1/2 teaspoon cinnamon
2 eggs, beaten
2 tablespoons milk
1 teaspoon vanilla
3/4 cup raisins (optional)
1/4 cup pecans, chopped (optional)
1 cup marshmallows
1/2 cup brown sugar
1/2 cup pecans, chopped
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350º
  • Spray baking pan with cooking spray.
  • While sweet potatoes are still warm in a mixing bowl, mix in butter, sugars, cinnamon, eggs, milk and vanilla.
  • Fold in raisins and pecans, if desired.
  • Spread in baking dish.
  • Make topping mix, which consists of the last 3 ingredients. Mix brown sugar, pecans and cinnamon. Add to top of sweet potatoes.
  • Bake for 25 minutes.
  • After removing casserole from oven, place marshmallows on top. You may want to add a small amount of brown sugar, cinnamon and/or pecans on top of marshmallows.
  • Bake 5-10 minutes more until marshmallows brown to your liking.
